@OleseaSlavinski Thank you for confirming my observation. I have easy access to both Speck and Prosciutto de Parma. As a suggestion, Prosciutto "ends" are a bargain relative to the middle portion, because grocers can not sell them sliced, at the same price, as the center and front portion. Same holds true for Speck. I was also thinking of Pancetta instead of bacon, as you suggested. Caio, cara mia!
