Are you gluten free or just don’t eat pasta because of carbs? I am gluten free and use Chinese rice noodles. Sometimes you just need the noodles! Or this is good over gluten free pizza too. Or zoodles

Seems like a shortcut bolognaise recipe, but you might consider cooking it a little longer, and using the pressure cooker if you don’t want to spend too much time. 1 hour of cook time = 3 hours on the stove, and extracting all that meat flavor into the sauce is totally worth it!

He's not draining the oil. I use olive oil as well when cooking ground meat, and do not drain it. PS: we are in Europe.

I can't imagine how bland the dish could be with smoked paprika. But smoked paprika plus ancho powder sound really nice too.
