Double Crusted Chicken Pot Pie

  • Pure comfort in a pie plate. The pastry dough can be made a day or two ahead of time. Rotisserie chicken and frozen vegetables work great for the filling. Ingredients are listed below:
    For the crust:
    2 1/2 cups all-purpose flour
    1 1/2 teaspoons salt
    12 Tablespoons (1 1/2 sticks) cold butter, diced
    1/2 cup sour cream
    1 large egg, beaten
    For the white sauce:
    1/3 cup butter
    1/3 cup flour
    1/2 teaspoon salt
    Grinds of black pepper
    1 teaspoon garlic powder (or to taste)
    1 teaspoon dried tarragon (or to taste)
    2 1/2 cups milk, chicken stock, or a combination of the two
    For the chicken and vegetables:
    A 10-ounce bag frozen peas and carrots
    1/2 to 1 cup diced onion (frozen works great here)
    2 cups (or slightly more) cooked, cut up or shredded chicken
    For glazing the pastry crust:
    1 beaten egg
    Bake at 450°F on the lowest oven rack for 18-20 minutes, then lower the temperature to 375°F and continue baking until the pastry colors deep golden-brown -- 12-15 minutes. Allow the pie to cool for at least 45 minutes before serving.

    I smile because my mother also said there was too much salt in the small frozen pot pies. She was a nurse and when it came to food, she always wanted us to eat healthy prepared foods. She did break down and purchased four frozen small chicken pot pies which my brother and I shared. After that she served them on a monthly basis. Little did my brother and I know at the time, that when we were at school she would make homemade chicken pot pies and put them in those small foil tin pie plates. We loved them so much and they were so tasty. She had kept the box the original ones came in and put her pot pies in them so we were not aware she made them. My brother commented that they did not always taste the same and she replied. "Honey, not all chickens look alike and because of that they do not taste the same." We never gave it another thought and loved every pot pie she made us. It was when we were about twelve years old she told us the truth about the frozen pot pies she served us when we were younger. I replied to her, "Mom, Bobby and I knew they were not the boughten pies because they always had a small heart of pastry on the center of the pie, but they sure were good to eat." When I think back, it was the size and individual pie that made them so desired by us, and the small tin pie plate. Mom's pies were so much tastier to eat and full of meat and veggies. Mom was the best!

    I grew up with A orange and a few walnuts in my shoes for Xmas. But they had to be spiffy clean. You can tell what century I come from in Germany after wwll

    Enjoyed the story about your wise mother not wanting you to have frozen dinners but for Christmas gifting you with frozen pot pies. My mother was a very good basic cook but with four boys would sometimes resort to Swanson TV dinners. We were allowed our own TV tray and would sit in the den and watch TV, while we ate. We all thought it was a big treat. Your chicken pot pie looks delicious. When the weather cools, I will definitely make it. Thanks, Kevin!

      Can relate!! Watching "the big show" on TV from 4 to 6pm...while eating on a TV tray: huge treat. It gave me my love of old movies, too

    Hi Kevin, I do hope that you see this comment since this video is a year old. Your channel just popped up on my YT feed a couple of days ago. I subscribed to your channel. I have really enjoyed watching you make cooking look so easy. I also grew up in the 60's and early 70's. Frozen Swanson dinners, Kraft Mac & Cheese, Chef Boyardee canned meatballs over rice, Chung King Chinese food in a can and some others were staples at our house, mainly because my dad was gone most of the time. Mom worked and was tired when she got home. She was still eating all of the microwavable frozen foods when she passed 2 weeks before her 96th birthday in Dec 2015. I think it was the preservatives that kept her going! Just a side note, mom was born in Spokane in 1920. Regards to you, Mr. Fox and your four legged kids! I loved the videos with Binky when you first rescued her. What a cutie. I'm a cat mom and I have adopted from local shelters over the years. Thanks for your enjoyable videos!

    Just one tip. When you make your white sauce or bechamel, cook your flour and butter a bit longer until it "honeycombs", i.e., begins to look slightly crumbly but not so long as to discolour it. This will also ensure a smooth result. Pie looks great. Have you tried chicken, leek and potato with the addition of some ham with top and bottom crust plus bechamel and chopped parsley. Do give it a try. One of these days I will send you my Mediterranean Tart recipe which I actually created myself and am a. It proud of. You are such heart lifting person, such change from time hectoring style of so many presenters!

    I am embarrassed to admit that, yet again, I have turned to Mr. Jacobs for comfort and a sense of well being. Have watched these short videos many times and, as I have mentioned, I come home wanting to feel that life is good and kind and another visit with him seems to do the trick whether it is cooking, gardening, touring his home or planning a dinner. It may seem foolish but so it is. Discovered him late 2022 and I can see that his tutorials will be a big part of 2023 no matter how many times I watch him roll out the dough! Many thanks.

    Hello Kevin, Yes, I loved those Chicken Pot pies from Swanson also. But Kevin, I am 80 years old now so you are still a youngun and love how you taught us this recipe for making at home.     I was a kid in the early70's. My mother was a gourmet cook. No junk food or fast food. But if she had an evening out with my father we got to have a frozen tv dinner as she had no time to cook. Boy did me and my brother love that! We wished my parents would go out more often!

    Kevin, you just revealed that you are the same age as my sons. You are a son that would make a Mother proud., as i am sure your Mother is delighted with your accomplishments.💕 . Yes, we had no microwave ovens back in the ‘60’s and 70’s, hard to believe, but true. The nice thing about those little pot pies was that the crust puffed up goden brown in the oven and the kitchen smelled delicious.. You just can’t get that crust in the microwave. I have to admit that those frozen pies and frozen family size pans of beef and gravy etc were a real help to me, raising a family and working full time.However, nothing can substitute for real home cooking. Your double crust chcken pot pie is just Fabulous. I learned something new with your crust recipe, Thank You so very much for sharing.

    Child of the 60's - 70's as well. Frozen chicken pot pie for dinner meant our parents were going out and a babysitter was coming over to watch us. Your pie looks much more enticing. Will have to give it a try.

    You were an easy child...this comment made me laugh out loud as I think of what kids ask for nowadays. My mom is a terrific cook but my dad just loved getting these as treats as frozen foods were such a novelty.

    I love your pot pie Christmas story! Thank you. Your mom was thoughtful to you. Child of the 60s here, my mom, also, never would hear of fast food or frozen meals. But when I'd go to Seattle to visit my grandma she made me feel so special when she'd ask what I wanted for dinner! We'd walk to MarketBasket by Empire Way (now, Martin Luther King Jr Way) and she'd buy chicken pot pies (2!) for me, and some Archie comic books. We'd walk home and cook dinner and I thought I'd die from happiness☺️when I cracked into the crust and enjoyed my own pot pie. Seriously, it is such a fond and vivid memory of my grandma and a bit of my food nostalgia. Thank you for your channel and your stories 😊.

    Oh, Kevin! I have just found your channel and I'm enjoying all your videos so much! Your story about the frozen pot pie really reminded me of my childhood. I had a stay at home mom who was a wonderful cook and fabulous baker. There were 7 of us kids in the family. I too was influenced by watching commercials. We would ask mom for pot pies, tv dinners,

      And frozen waffles. She and dad would say no those frozen things aren't as good as mom's cooking. Our older brother was working and would give us a quarter for an A on our report cards. We went to the grocery store and just had to buy those things for ourselves. We found out that mom and dad were right when we ate those frozen foods we bought. I never realized what a lucky kid I was tp have such a great mom!

    One thing I like about this pot pie is that there is more crust on the top and the sides. When it comes to pie I prefer more crust.

    Child of the 50's, & yes, Swanson TV dinners were a big deal for us kids. My younger brother ate 2 at a time LOL. We rejected frozen chicken pot 🥧 pies, but I guarantee the whole family would love this version.

    When Mom went to shop for groceries on Fridays after work, we always had chicken pot pie, because she didn't have time to cook dinner.. Honestly it was my favorite meal of the week! And I love that you didn't have to pre-bake your crust because you put it in at 450 and then lowered the temperature. What a great idea!

    I am sick in bed and binge watching your videos. I love the story of your mother. We did have the Swansons chicken pot pie as my mother did not make her own. Occasionally we would have the t.v. dinners....by the t.v. which was rare but very memorable. love the stories, keep them coming and thank you.

    My dad never liked TV dinners growing up in th 40's and 50's. But he did like those little pot pies. It was a treat when he made dinner because they were easy and a favorite with my sister and me.

    I grew up in the 50s and 60s and we didn't eat many frozen dinners. I never thought they were very good back then, but I admit I did love the pot pies. I didn't get them very often, though. My grandma mostly served home cooking.

    I remember getting those little frozen pies, and as I recall, they weren't horrible. But then, we were so poor we couldn't even afford to pay attention! It didn't take much to please me as a child. I bought them for my son when he was little, too. I was a working single mom, and bought them again when he was a teenager 2004 - 2008. What I noticed is that these little pies have steadily become less and less palatable - first, less meat. Next fewer vegetables. The last time I bought them - Marie Calender's, I think - they were filled more with gravy than much else, and very bland. I will definitely give your recipe a try - It looks SO good! I'll bet my son will really enjoy this, too!

    I'm 63 and every Christmas, I'd have a pomegranate, in the tie of my stocking, a good handful of assorted nuts in their shells, a few chocolates and an assortment of cool lil gagets and toys maybe a lil jewelry.

    I am thoroughly enjoying your cooking channel… plenty of time nowadays this should give you a chuckle. I come from a deep, southern family and my parents put me on a Swanson TV dinner diet because they felt I was getting a little pudgy…. Crazy times. I am glad to say it didn’t last very long.

    Kevin that looks so good! We never had tv dinners growing up. I have a suggestion for your bottom crust, just use an egg white to spread over your uncooked bottom crust. I heard that on recipe tv!

    Hi Kevin…we were “treated” to a Swansons frozen dinners when our parents went out for their rare date. I grew up in the early 60s. We eventually moved from frozen dinners to just the frozen pot pies. I loved those chicken pot pies. When I was old enough to cook on my own, I graduated to homemade pot pies. I still love and make chicken pot pies but they are now made a bit healthier with herbs instead of all the salt. Yummy!!!

      Yes! I remember the folks getting dressed up, Mom putting a Swanson frozen Turkey dinner in the oven. I looooved that mushy stuffing!

    Kevin, this video is a year old but i saw a lady on you tube showing pastry brushes that at a time Walmart sold some that may you might like if they still sell them. Don't remember how old her video was. Sorry. But still may be worth looking into. I love my silicone brushes.     Hello, Kevin. I’m new to your channel and have been binge watching every evening. You have such a calming voice (if I may be so bold as to say so). I have a folder with many of your recipes. So far, I’ve made the cabbage pie which was delicious (despite the fact that I’ve always loathed that veggie, probably because growing up in England in the 1950s, I remember the odor of boiled cabbage that Mum cooked ).     You, my friend, are an amazing teacher!! I learn so much by watching ALL of your videos. We love pot pie. I usually use the store bought crust 😔. No more. This looks easy and I bet it’s delicious. When I was growing up, my dad worked turns ( dayturn, afternoon and midnight) at a steel mill in western Pennsylvania. My mom wasn’t much of a cook anyway. In fact she hated it. So when dad was working she would give us frozen pot pies or tv dinners. You were very fortunate to have a sweet mama that cooked for you. Thank you for all of your videos. Could you tell me where you got your measuring spoons? Love that shape. Also, I watched your video on planting seeds in a cleaned out milk gallon container. I planted my spinach. Can’t wait!!

    Kevin thanks for the tip on freezing celery ! The celery you used in this recipe looks so fresh . Some people wrap their celery in aluminum foil keep it in the crisper, I don't trust that , because aluminium foil does release some its properties in certain situations . Just take an unshaken pencil and rub it on the aluminium foil , back and forth . You see a transfer to the object ( I think it's the shiny side of the foil ) . I wondered my the celery I would freeze would turn a lighter , almost pale green when frozen . I am going to give your method a try ! Again thanks and say hello to Binky 😸

    Thank you for the video and recipe! I made something so similar, save I used a store-bought crust and added some corn. I put a tiny bit of dry white wine and some white cheddar to the roux, chicken and vegs. It was a very popular dish at Wed. night Bible study. :D Thank you again for all that you do!     When I was growing up in late 70s and 80s I dreamed of having Jiffy Pop popcorn, mac & cheese, takeout chinese, and I never tried a Swanson frozen dinner until early 2000! It was the most disgusting saltiest and chemical tasting prepped meal I ever had. So I figured I didn’t miss out. I was 18 the first time I had restaurant chinese food. And 19 the first time I tried Kraft dinners. I was bamboozled by kids commercials back then like Chef Boyardee or cereals. I never had them but at age 19 or 20, I bought a Chef Boyardee just to say I had tried it. It was ok. We would create fried rice versions at home. My mom and I cooked from scratch, and the only treats I recall were Little Debbies swiss rolls, del Montr chocolate pudding in tin cans, and tang orange beverage. She got icecream and made roulade cake to stuff it with the icecream and it seemed like she always had something to serve up. Cookies were homemade lemon cookies.
    I am grateful we had healthy simple food and nothing pre-made. I always felt poor and like I missed out but we never did.
    Oh! also shake and bake looked cool but I never ever tried it cuz I always made my own.
    The first time I had chicken pot pie was because I made it. We never had them premade until I was an adult. Home made are the best. I will try THIS crust next time! Will look for the recipe.

    I am glad I ran into this recipe with Bechamel Sauce. I am coming from watching a previous video with another Chicken Pot Pie where you made a cream using corn starch (I will try it as well but I am partial to Bechamel!

    I love a good pot pie. I use 7 up for the liquid. The crust is so flaky. I grew up in the same era as you over in Tacoma WA. Our mothers were very much a like. Mine would not buy Swanson's either. I just loved the turkey and gravy frozen meal. No way, no pizza or tacos for the matter, ever!! Poor us, but probably healthier. 😅🦃🐓

    My mother was a great cook no fast food. Later as we got older started to have few pop pies etc hold you over

    I am about your age and I too begged my mother a frozen n dinner but mine was frozen t.v. dinner but it was awful .
    I chose a chicken dinner and I was soooooo disappointed in the taste.
    The pot pies were good .

    Kevin, you're lucky your Mom cared about proper nutrition. My mother was the world's worst cook. If she didn't see it on a tv commercial and it came in a box or can we did not get it. She thought actual cooking was frying. I was so happy when I moved out on my own and learned how to actually cook food.

    IMO, the tarragon in pot pie totally ruined the taste (i made your puff pastry pot pie today regretfully). The pie crust in lieu of puff pastry is the only way to go so it's nice to see you've made the change. Yes i prefer a thinner creamier sauce using a roux with milk plus chicken broth. I also say no to egg wash on crust. To each his own. I like to make little individual pot pies like KFC.

      I didn't care for the inexpensive brushes. I got annoyed with them when they shed their bristles on painting projects, but even more so when they shed their pesky hairs on my food.
