This recipe is a good basis for using up the remains from a turkey carcass, cut in to reasonable sized chunks, incorporating any of the jelly adhering around the bird. I also like to add celery (including any leaves finely chopped) copped small and exclude the carrots, serving them separately, steamed and buttered, garnished with parsley. My bouquet garni would be a sprig of thyme & parsley (mainly stalks), etc., with an added large bay leaf wedged between two pieces of the broad end of the two celery sticks, firmly tied together. Another nice addition to the sauce can be a sprinkling of ground mace or a few gratings of nutmeg. My mother was a very good and adventurous cook from here in Devonshire UK, who was largely brought up by an aunt who had been a cook in gentleman's service. Your recipes have much more in common with this type of cuisine than most American kitchen bloggers.

Last October I processed some American Bresse cockerels that were 33 weeks old - A little too old to roast or fry, but just right for making Chicken Fricassee or Coq au Vin. Two of these birds are languishing in the freezer. I guess it's time to make Chicken Fricassee! Yum!
Kevin: You make me nervous with the skillet handle over the floor rather than to the side. My 10th grade Home Ec teacher (that was 70 years ago) made us promise we would never do that as it was so easy to knock pan off and burn yourself. So be careful. We're having a "cold spell" here in Marianna, FL - It's only 70 degrees right now, with an expected high of 84. This chicken fricassee will be perfect for tonight's dinner! LOL, I have a 5 year old barred rock chicken named Fricassee, who is the first to come running for the trimmings off of the tea sandwiches! She adores them! Binky is so cute! She's going to be a stunner of a housecat! UPDATE: I made this recipe last night - It was AMAZING! Thank you!
