Very interesting "quick" chicken pie! I might give this a try one night, sans the vegan/gluten free ingredients. I'm making your double-crust version for dinner tonight. Since I don't have an instant pot, I will be using a pint of my home-canned chicken. I do a lot of canning, and pressure canning chicken is really very easy - I raw-pack it with just a little salt and it makes its own broth. The best part is that I can buy several pounds of it on sale, can it up and it's shelf stable! One canner load gives me ten pints of cooked chicken - no instant pot to clean and no waiting for the chicken to cool for 9 more chicken meals. I buy a lot of things on sale, as my budget is "social security tight" and it save a great deal of money. Today, I'm canning green beans, and had some left after filling the canner - They're going into the pie!
I DID IT! ABSOLUTELY DELICIOUS! Not as quick as you said because I had to boil potatoes that I cubed; my market did not have frozen potatoes. But I followed your directions perfectly, and my daughter and best friend are coming over for 'take-out'. It makes a lot! Thanks so much. I definitely will make it again. I like gluten free puff pastry in your recipe! I've never tried that and I'll have to buy one. I love a good pastry stew. Its wonderful to hear you say Mr. Fox as this formal way to refer to someone of adult age. I grew up in the 80s and 90s and we wouldnt dream of addressing any adult by their first name. Today its never used with children, except in the schools. I always wanted to be addressed as a Miss...etc. I think the formality sounds so refined and respectful. It is so refreshing. I would absolutely love to address people in this way but I'd be looked at as if I had 10 heads😄
I raised my kids to be respectful of their elders, I grew up in Florida in the 70s, so they were taught to treat elders the same way I was taught to treat them. Even as adults, my children still call my closest friends Aunts and Uncles. Even Miss and Mr. for newer acquaintances.
Love your tutorials! Thank you!! I will try this recipe soon. I discovered frozen organic chopped onions recently. So convenient. I put them in canned soups that I beef up with frozen peas and carrots. The onions would add a nice depth of flavor along with the onion powder. I adore tarragon with chicken. I used a family biscuit recipe for a top crust all these years. I want to try puff pastry now. Saves time. Thanks for your recipes.

I'm making this tomorrow BUT Ralphs/Kroeger in Los Angeles DOES NOT have the Southern cubed potatoes, so I was forced to buy frozen shredded potatoes. I'll let you know if it works out. I love chicken pot pie. Never thought of using hash browns. I will give it a try except for the crust. Not a fan of GF substitutes. Do you think the sauce would have had more flavor using 1/2 the stock instead of milk? I'll incorporate it and see.

Since you already had the veggies in a big bowl, would it not be easier and less messy to mix the chicken, veggies & cream in that bowl, then transfer it to the baking dish? - just a suggestion.
This looks great and I think I’ll make it today! The only thing I would do differently is I’d probably not wear the gloves while separating the chicken out from bones etc. only because it’s easier to feel the bones without the gloves on and fat and skin too. I’m one of those super unlucky people that that sort of thing happens. I’d serve my dish and they’d break a tooth haha!
Your Pie looks good.. but will the white sauce have a chicken flavor?? I think I would put some “Poultry Seasoning” in the Instant-Pot while chicken is cooking..Or.. in the Sauce mix! Just to give it more Depth of Chicken Flavor!! However! Your Pie is Beautiful!! 🤗🙌😋👏👏👏

I am laughing my butt off, My New Friend. I got 4 roosters from the last bunch of chicks I incubated in October. Looking up recipes and I had too respond. Why don't you come over Sunday and I will show you how I make a chicken roast, then the next day chicken stew, then chicken soup, then chicken and dumplings and if there are still more leftovers, I'll stuff it perogies. No, we don't eat all the chicken meals in one week. My freezer is a filing cabinet of wonderful homemade TV dinners, lol. New subscriber, I think you're great.

Kevin, why do you usually use kosher salt instead of regular table salt? Have you ever considered using Pink Himalaya salt?? I love the taste of pink salt.

If you can call it up on the computer the receipt is on page 166. The Store was called FANNY FARMERS. THE Dumplings are cooked just like you had done 10 minutes cover off and 10 minutes on. I put some Parmesan grated cheese in mine with Rosemary mixed in the dumplings, also dip your spoon in the hot chicken mixture before you start to scoop and drop each dough mixture ( they come off the spoon better. I ENJOY chicken dumplings so much, but I can't make them to often, like you have said I want to eat them all. LOL🌞🙏💖🌻🦆😊
I am a new dialysis client and need to cook for two days on my off days. This will be a great two-day meal for us, so I thank you very much. I just ordered all the ingredients from Ralphs.Kroeger for delivery. I don't go into the huge markets now because of fear of Covid which would be disastrous for me. ALSO, I am ashamed to admit that I have had an InstaPot for two years. I'm afraid to use it! Therefore, it sits in my kitchen taking up needed space and definitely making fun or me. So, a lesson from you on how to use an Insta Pot would be appreciated. Thank you.
