  • This old-fashioned dessert is surprisingly easy to make. All you need is a bowl, a whisk, and a baking dish! Ingredients are listed below. Thank you for watching.
    Classic Rice Pudding
Ingredients for a 3-quart baking dish (about 8 generous servings)
    3 large eggs
    1 cup (200 grams) sugar
    1/4 teaspoon ground nutmeg
    2 tablespoons melted butter
    1 teaspoon pure vanilla extract
    1/2 teaspoon salt
    2 1/2 cups milk
2-3 cups cooked rice (use the lesser amount for a creamy pudding)
1/2 to 1 cup fruit: Raisins are traditional. I used diced up peaches from a drained, 15-ounce can of sliced yellow cling peaches.

My granny just did it in the pot or pan. Leftover rice, milk, cinnamon and raisins. A touch of vanilla too. She went through the depression. My sister and I loved it. Granny let us sprinkle sugar on top.
A way to do it if you don't have time to bake it.

After everyone had a good serving of buttered rice at dinner, honey was stirred into the rest. After dinner it was a great dessert. It also made a great breakfast with the addition of a bit of cinnamon while heating it up in as much milk as wanted 😁

There are a lot of novice cooks here. You're the first one I've come across to tell viewers how to test if the pudding is done! Very important detail. You always can't assume people will know. Lot of viewers too don't know what and why the addition of certain spices enhances a dish. Thanks for posting.

Well, since you asked - I'm one of those people who loves raisins in my bread pudding, or rice pudding, and even in cinnamon rolls. I also put raisins in my cole slaw. Go figure. But your point is well made when you remind us it's "your" pudding or cinnamon rolls or cole slaw, etc. I'm sure that your versions are tasty and delicious, so please continue to "have it your way". One of the reasons I like fixing recipes "my way" is my ability to add or delete what I like. That's what making recipes my way is all about. Thank you for all that you do and for the variations you offer!

Kevin, since I only discovered your channel days ago, I'm having a lot of fun catching up on your videos. There's not one video I've watched that I wasn't mesmerized by. It's truly a therapeutic experience watching you bake, cook, garden, shop, or even clean. Last night I sent a friend a link to your channel and it was one where you were cleaning the ashes out of your fireplace and polishing the wood. Cleaning my fireplace is always something I dread, but watching you do it was zen like :) How fortunate Mr. Fox is to have someone like you making a delicious and healing comfort food. It's raining here in California today so I'm making a pot of split pea soup for dinner and will surprise my husband with this delicious dessert with our evening tea. We like raisins in baked goods but I think I'm going to use dried cranberries tonight. Thank you for another fabulous recipe.

I love raisins every possible way they can be used in baked goods and I also love them by themselves!!! I sometimes plump my raisins in warm water or rum depending on how they are being used. I haven’t had rice pudding is a very long time-I need to try your recipe, except with raisins--and then again with the peaches because I love peaches!!! I’ll bet this recipe would be delicious with pineapple as well!!!

Raisins everywhere, please! In Chile we make a dessert called "arroz con leche", which is rice with milk. You cook the rice (on the stove, not the oven) in milk with sugar, lemon or orange peel and cinnamon. It can be served cold or warm. It's creamy and delicious. It can also be cooked with evaporated milk or a combination of evaporated and sweet condensed milk. My mouth waters as I write this!!

Luckily everyone on my side of the family loved raisins. My husband and his family with the exception of his dad didn't like them so I came up with an alternative idea. I rehydrated dried cherries, cranberries, pineapple, mango, apples or I'd add nuts (sometimes this was a combination of these fruits and nuts or I'd just choose one). Of course I adjusted the spices between, cinnamon, allspice, clove, ginger and mace. Garnished with homemade whipped cream, a couple of the dried fruit or nuts pieces and a sprinkle of the condiment used. Haven't made this year's since most of our families are decreased. It was nice of you to think of your friend. Thanks for sharing.

I can’t wait to try your rice pudding! I like the idea of using peaches! I use an old English recipe. Preheat oven to 300*. Combine 1/2 cup uncooked white rice, 1/3 cup sugar, 1 quart scalded milk, I pinch of salt in 13x9x2 inch baking dish. Dot the top with 2 tablespoons butter. Place pan in oven and stir every 15 minutes for 1 hour. Top with nutmeg and bake undisturbed for another 30 minutes. No fruit needed. It is creamy and delicious! Your china set is lovely, too!

Kevin I like this recipe and have made it. Both my mother and grandmother made rice pudding a lot and they ALWAYS added raisins ( and cinnamon), so I guess I like having them because they were always included as I grew up. But I like the idea of trying peaches too. I have never tried dead flies so I have no comment on those remarks!
I love your little two-handled pudding dishes, and your beautiful china. My preferred china is Fiesta Ware. Although Homer Laughlin made similar two-handled pieces in Fiesta, they were called "French Onion Soup" bowls, come with a cover and are extremely rare and thus hard to find, as well as being the most expensive Fiesta pieces if one is lucky enough to find them. Yours look so nice and appropriate for a dish like this.

The lightly browned custard which contains the Rice Pudding creates a delicately jiggling mold that with the peaches outshines the white grain. /
