I just made this for Valentine's day and added espresso powder, Mascarpone cheese and dusted the top with shaved dark chocolate to make a makeshift Tiramisu Rice Pudding. It was amazing!
Cubans call it arroz con leche and we make it with a bit of lime peel, evaporated milk, condensed milk, and cinnamon sticks! So delicious and love seeing cultural varieties.
Woot! I feel vindicated! I've been secretly using the one-pot method to make rice pudding for years. Always thought it was because I'm lazy (I am!). Now it is an official, chef-approved method and I don't have to hide my little secret any more! Thanks, John! 😊
Same, except my grandmother added raisins to the milk as it was cooking so they become plump, sweet, and delicious. I'm not really a fan of raisins, but cooking them really makes all the difference.
In Sweden we eat rice pudding as a dessert on our smörgåsbord of Christmas food. it's super yummy with a sweet Strawberry sauce! However we cook it differently. We use short grain rice and instead of boiling the rice before adding the milk we just pour in the milk and let the rice boil in it. :) it is also a Christmas tradition that you put a almond in the saucepan and whoever gets it is supposed to marry with in a year.
I've never seen Rice Pudding made this way . My Mother would makes it with Condensed milk, Evaporated Milk, Whole Milk, cinnamon sticks, lime zest ,Real Vanilla,Sugar and Valencia Rice
If you use brown rice and cut down on the sugar, you get something that's more enjoyable as a hot breakfast item. It's good when you get tired of oatmeal and want something simple and filling but not heavy like bacon and eggs.
I used to make rice pudding with my grandma and tonight, I made this recipe with my daughter after watching this. Thank you!! It brought back wonderful memories!
Thank you Chief I was wanting a recipe so I could make my own! I am one of those odd people that does crave rice pudding. I normally enjoy it in the morning as side to breakfast or paired with some strawberries.
I've never seen a recipe like this one. I'm from Mexico and at home my mom and my aunts never made rice pudding with egg and butter and it was always cook with milk. However I'm curious and I'm going to make it following your recipe. Greetings!
Wow this is VERY similar to the Danish festive dishes Risengrød & Ris a la Mande. The first of which you serve hot for dinner with a sprinkling of cinnamon sugar, topped with butter and served with a low alcohol beer called Hvidtøl. The second is the dessert edition, which has cream instead of milk, almonds, vanilla and is served cold with a hot cherry sauce on top. Usually a whole almond is hidden in the whole portion of the latter, and the one who is lucky enough to get it, gets a small present. This looked like a great variation, I need to try it! Great recipe!
That looks yummy! I've never made it with egg before, mine thickens up from the rice's own starch. I also throw in a cinnamon stick & 1 star anise, plus evaporated milk & heavy cream. I really like this because it seems the time to make it is considerably shorter!
Oh, IDK. I've been craving this lately. But yeah, not sure I'd get it at a restaurant, because they tend to make it in really big batches and it's just not as good as something you'd make at home.
Man, I want to try this one soon! I have tried making rice pudding through an online recipe I found a couple of years back but it never turned out the way I wanted (including the texture). So I am going to give this one a whirl! It looks already like it's leagues better than the one I have done so many times too many.
Yummy! I love rice pudding. When I make mine, I soak some raisins in a little rum, then add them in the pudding. The alcohol gets cooked off and a nice kick of flavor is left behind
Tamara Tamtam Morris Oh my goodness I never thought of doing that with the raisins, I just made Arroz con Leche next time I definitely have to make it like that
I wouldn't have thought of it either until I saw a recipe for it online somewhere and thought "hey, why not give it a try?". It's a staple now when I make my rice pudding
Well, this sure beats my makeshift rice pudding of using old takeout rice, throwing in milk and cream as well as cinnamon, vanilla and nutmeg and stirring until the consistency is what I like. I'll definitely have to give this recipe a go!
Rice pudding makes me think of my school roommate who made spaghetti pudding out of leftover pasta. She did. It was surprisingly good. Why not? She was the Martin Luther King of her starchy pudding.
I would like to dispute the claim that people do not claim rice pudding. I have on many occasions and know what restaurant will have it on what day. I've, also, made it myself many times when the craving hits. I love it THAT much.
Oh yes, I love rice pudding. Especially, golden raisins. Thank you, for this quick and easy recipe. What are your thoughts on substituting half and half for milk? Have you a video on bread pudding? Appreciate your channel ❤
Wow i never thought id find a single video to disagree with chef john so much on but i love rice pudding! I actually have sought it on restaurant menus, i love raisins (tho the crasins sound interesting,) and i think it tastes so much better warm rather than cold.
Use whole milk and condensed milk instead of sugar for better flavor! When you cook the rice, add a couple of sticks of cinnamon to the rice for additional flavor. So easy!!
Cooks Illustrated had a thing on egg tempering this past month in which they determined that it's moisture that prevents eggs from going scrambled: if they're wet enough, the proteins can't cross-link into a scramble.
And for the few people who don't like the thin "skin" forming on top of the pudding while it is cooling of which becomes sticky and a little annoying you can just use a cold bain marie (a bow filed with cold water and some ice) and just cool the hot rise in the pan. This will prevent it from forming and you will have to wait even less to enjoy it!
I am often craving rice pudding - just my favorite - with some Redi-Whip. Your recipe looks delicious & I will be trying this cause I have leftover rice in the fridge! Yippee 😎

In Brazil we often make it with coconut milk, condensed milk and grinded coconut...and yes, we crave for it
I just made this for Valentine's day and added espresso powder, Mascarpone cheese and dusted the top with shaved dark chocolate to make a makeshift Tiramisu Rice Pudding. It was amazing!

Emily Anne Exact the same here in México

Great recipe. My (italian) grandma likes to cook the the rice on the milk with some sticks of cinnamon and whole cloves, turns out great too.
26muca07 my roots are Dominican and we do the same :)
26muca07 Awesome! My mom taught me to make it similarly, but we use the cinnamon stick & star anise. 😃 I'll try clove next time.
Ps, also ground nutmeg
Same, except my grandmother added raisins to the milk as it was cooking so they become plump, sweet, and delicious. I'm not really a fan of raisins, but cooking them really makes all the difference.
That is how we do it in Greece too
You are the jefe of your arroz con leche!
I also like to mix my arroz con leche with vanilla or butter pecan ice cream
I've never eaten rice pudding. I've also never actually cooked any recipe from this channel. I think both of those things are about to change.

"Nobody ever craves rice pudding," he lied.
And he has probably never tried Cozy Shack. People go crazy over that brand of rice pudding!
FanfareT.Loudest I can't buy it! If I do, I end up eating it all in one sitting!
I have never had Kozy Shack before... Is it just basic rice in creamy sauce, but premade?
Try this with coconut milk. Trust me.
I am quite the fan of rice pudding...typically make the stove-top variety with leftover rice. Nutmeg is our spice of choice. Thank you for this!!!
I've never seen Rice Pudding made this way .
My Mother would makes it with Condensed milk, Evaporated Milk, Whole Milk, cinnamon sticks, lime zest ,Real Vanilla,Sugar and Valencia Rice
david fuertes lol idk I thought rice pudding and arroz con leche were the same but it's not
i love egg custard, i crave that. but i love tapioca and rice pudding without raisins too. thank you chef. ❤
This is a staple in a Cuban household! I love it so much!

I used to make rice pudding with my grandma and tonight, I made this recipe with my daughter after watching this. Thank you!! It brought back wonderful memories!
It's really good when done with left over rice. I also eat my rice pudding hot off the stove.
Thank you Chief I was wanting a recipe so I could make my own! I am one of those odd people that does crave rice pudding. I normally enjoy it in the morning as side to breakfast or paired with some strawberries.
I always hated rice pudding. And I still do 😖
But man! You're Chef John and you always deserve a thumbs up! 😏

Yesss Jonny !!! This makes me wants arroz con leche!

Never heard of using more than one pot but maybe that's just the cuban way. And eating the scorched bottom is the best part! We fight over it.
Hello Chef John..Was expecting a sneak of Cayenne somewhere... :):):)
He pretended the cinnamon was cayenne to make himself feel better.
Those of us who had toddlers in the 1990s know perfectly well that Cinnamon is Cayenne's grandson.
Oh my lord, rice pudding creme brûlée style? 😍 I must try
Rice pudding is delicious 😍 I crave it all the time, so thank goodness the diner across the street from me has it.
The dessert nobody wants but everyone loves
Also finally someone who understands how I feel about raisins. Except I'm okay with raisins on their own. Raisins in else is a no no.
My mom loves rice pudding with maple syrup. It's delicious.
Oh, IDK. I've been craving this lately. But yeah, not sure I'd get it at a restaurant, because they tend to make it in really big batches and it's just not as good as something you'd make at home.

I'll definitely have to give this recipe a go!
I love rice pudding!!
Rice pudding makes me think of my school roommate who made spaghetti pudding out of leftover pasta. She did. It was surprisingly good. Why not? She was the Martin Luther King of her starchy pudding.

Crème Brulee topping on rice pudding! Super genius!

You are, after all, the Cuba Gooding of your rice pudding!!
I just made this for a party of six and it was delicious.
I've never tried rice pudding, but I might try make it now I've seen this :^)
I like mine with a splash of coconut milk and top it with some caramelized diced pineapple. Sometimes I also use Rum extract for extra flavour.
i did this before but added everything to the pot all at once so that the rice would absorb the milk and sugar and not just water
I like rice pudding, especially when my stomach is upset. Now I have to go make some.
Yummmm. I am going to make this tomrrow and bring it to my mom. Thanks
I would like to dispute the claim that people do not claim rice pudding. I have on many occasions and know what restaurant will have it on what day. I've, also, made it myself many times when the craving hits. I love it THAT much.
I am ALWAYS craving rice pudding. It's my favorite dessert after panna cotta.
Oh yes, I love rice pudding. Especially, golden raisins. Thank you, for this quick and easy recipe. What are your thoughts on substituting half and half for milk?
Have you a video on bread pudding?
Appreciate your channel ❤
A restaurant near me has the best rice pudding! The serve it warm topped with Frosted Flakes, so yummy.
Wow i never thought id find a single video to disagree with chef john so much on but i love rice pudding! I actually have sought it on restaurant menus, i love raisins (tho the crasins sound interesting,) and i think it tastes so much better warm rather than cold.
I love it warm/hot too but with no raisins.

You are the head lice, of your classic Puddin of Rice.
(I don't think I did that right. )
This issooooooooo different from the rice pudding I grew up with
I like it warm with some nice jam sauce, wish I had some now
I go out and look for rice pudding on menus! 😂 no regrets
Sheez. This is one of my favorites! Thanks!
You are the Mark Dice of your pudding of rice.
Use whole milk and condensed milk instead of sugar for better flavor! When you cook the rice, add a couple of sticks of cinnamon to the rice for additional flavor. So easy!!
I don't know where to begin with the myriad ways I disagree with this recipe. It has shaken my faith in Chef John to its very core.
Rice pudding is my favorite!
that freeze frame was EPIC
Cooks Illustrated had a thing on egg tempering this past month in which they determined that it's moisture that prevents eggs from going scrambled: if they're wet enough, the proteins can't cross-link into a scramble.
yet my mother and grandmother always added milk to scramble them and they turned out wonderfully! Pluss eggs are about 90% water anyway.

My mom and grandma used to make this whenever we were sick.
Um, I actually go to a particular restaurant because they have rice pudding. I crave it!
