I mentioned that we’ve been watching for years now, but I guess I was too starstruck to mention I also have the 7” Nakiri and Intentional Leftovers cookbook, both great! That guac and pepper dog looks awesome! My favorite way to make dogs is natural casing, of course, but I get about a pound of kapusta I get from a local Polish market (milder sauerkraut with some thin slices of carrots in it) and put it in a little foil pan with the dogs and put it over direct heat on my weber. When the kapusta starts to release some liquid and begins to boil, I move it over indirect heat and cover (under the vents, all vents totally open) for about 10 minutes to cook the dogs through. Open the lid, take the dogs out of the pan onto the direct heat to crisp them up and then back into the pan. Put the dogs in a bun, kapusta on top and then squirt some spicy brown mustard on top... Just awesome...
All three of those hotdogs looked delicious I don’t know which one I would choose to eat. Once again you did a great job thank you for your show,You guys do a fantastic job!!!

I was trying to make salsa in a skillet, and accidentally made a delicious hotdog topper. I cut up tomatoes, red onions, and serrano peppers. They were fryed in butter. I added garlic salt, black pepper, crushed red pepper, ginger, and smoked paprika. It cooked down and looked kinda like squash. I thought, man this would be good on some hotdogs. It's kinda a cross between Chicago & sauerkraut. 🐀🐾
