Here is a tip when cooking a stew. Never use prime expensive cuts, always go for the cheap 3rd grade meat on the bone because it has more flavour and taste. It is more tough than the expensive prime cuts but because you cook it for hours it becomes tender and soft and full of flavour. Use the expensive cuts for the barbecue and the cheap cut for them stew. Know what l'm sayin'?
I like this style of cooking video. I consider myself a good enough cook (Maybe bad enough) to know I'm not going to do it exactly like the recipe anyway. I just want to know what ingredients and techniques to use, and I'll get it done.

With the way he did this you can and really should use the cheapest cuts, instead of using a steak like in the video, brisket or short ribs would be stellar, but any of the rounds, chuck roast, you can use the tougher cuts because the tough fat melts away at those temps and the steak would've been mostly tender after searing
Recipe is fire, just made it tonight. Used a non stick skillet which isn't good for getting the sticky bits after the beef is cooked. Another couple of adjustments: 1) I could have used more beef broth, and 2) I cooked the gravy with beef (skirt steak) for 45 minutes and probably could have gone as low as 30 minutes. Thanks for posting the recipe, will definitely make this again.
