I’ve made that exact base gravy countless times. I’m hear to say it’s glorious. Options abound. Instead of sugar and mustard I add a little Marsala wine or sherry sometimes. Another variation that kicks it up is dried porcini mushrooms rehydrated using one cup of that liquid with one cup of beef stack. Then dicing up the rehydrated mushrooms. That makes it way more mushroom base. You can even skip the beef stock altogether and use all the porcini liquid.Yet another deviation would be to skip the soy and use worsteshire sauce instead. You can also use this base sauce exactly as it is here and add 1.5 cups of crème fresh or sour cream and make a nice stroganoff sauce. So many sauces so little time. Glad I found your channel. I’m a pan sauce /gravy freak.

Fantastic recipe. I would only suggest 1 small modification courtesy of chef Jon Kung, but it’s life changing. Get that pan ripping hot, no fats. Add mushrooms and let sear. Turn down heat, let mushrooms caramelize and darken. THEN add butter. Makes anything with mushrooms much more flavorful and reduces the amount of butter you need to make the roux, which means smaller waistline. Raw mushrooms soak up fat but cooked ones don’t.
It’s tiny life hacks like this that make all the difference in being healthy, I’ve found. Try this with almost any vegetable.
I also keep olive oil in a mister that I pump nitrogen gas into as the propellant. Is it commercially viable? Heck no, but it’s also how I pump my beer. Does it keep my calories down while maintaining full flavor without the toxic crap they put in “cooking spray?” Yes!

Mushrooms are grown in cow manure. Source of E Coli. I always buy whole mushrooms and wash and slice them. I mean if they were portobellos I'd probably be very careful how i did it but that's not what I'm talking about. Anyway I was "taught" to make a mushroom gravy for cube steaks by a friend who passed in 04. Lightly floured the steaks. Marked them in a cast iron skillet with probably an inch of corn oil. Covered them with Gold label mushroom soup. Had to be gold label! And baked them in the oven about an hour. I haven't made them that way in probably 20 years. Surprisingly my friend died of a coronary. I slice my mushrooms in pure virgin olive oil until they have turned colors. I mark my steaks in the same pan. I mix some beef base with seasoning and red wine and add corn starch and then bring to a boil. I don't want it very thick. I put my steaks in an electric skillet (haven't had an oven for a year and a half) with just a little more olive oil. I pour the thin gravy over the top. Add the mushrooms. Put the lid on and cook it at about 200-225 deg for just over an hour. The gravy will thicken and you might have to add more moisture at some point.

I just came across your channel recently and made this mushroom gravy for dinner tonight. I served it over egg noodles and a smoked eye round that then went sous vide for about 18 hours. With some roasted carrots on the side. Everyone was licking their plates!
Thank you for the delicious dinner!

Yum! Love your technique. This has stroganoff written all over it. Add some sherry, lemon juice.

Just my opinion, but I’m pretty sure that gravy could make virtually anything taste good.
Like my dad used to say, “I could put that on a flip flop and it’d be great.” 😄
Dad was a mushroom guy. He made his son a mushroom guy. 👍🏼

Thank you! I broiled some cheap strip steak looking “grill or broil” steaks from my local grocery store and smothered them in this gravy.
    Paired with 1800 reposado tequila

Wow, looks delicious! I’m estimating that I’ve put on six and 1/2 pounds just watching. I’d eat that gravy on anything. I’d eat it on a plate with nothing else. Thanks oh Gravy Master! I’ll be back.
