    INGREDIENTS:
    ½ lb flour
    1 lb cheese
    1 stalk green onion
    ½ red onion
    ¼ green bell pepper
    1 tomato
    2 garlic cloves
    A handful of cilantro
    3 potatoes
    3 eggs
    ½ cup milk
    Salt to taste
    Pepper to taste
    Vegetable oil
    Achiote paste
    ½ corn
    RECIPE:
    Chop the onion, tomato, bell pepper, and garlic to make the refrito. Peel and cut the potatoes into medium-sized cubes. In a pot, add a dash of oil with annatto (achiote) and add the chopped vegetables. Cook until the onion is translucent, then add the potatoes, corn, cilantro stems, and cover with water. Let it boil until the potatoes are cooked. While the potatoes cook, in a separate bowl, mix eggs, salt, pepper, and beat. Gradually add flour and a splash of milk, continuing to whisk. In a frying pan, add oil to fry the batter we made. Cook until golden brown on both sides. Add the torrejas (fried fritters) to the soup along with cheese and milk. Let it cook for another 10 minutes. Serve with finely chopped cilantro. From my kitchen to your table. Bon Appetit.
