    INGREDIENTS:
    2 lb albacore tuna
    4lb cassava
    4 big tomatoes
    7 medium red onions (for the soup and to plate)
    4 stalks of green onion
    2 medium green bell pepper
    8 garlic cloves
    10 basil leaves
    1½ bunch of cilantro (for the soup and to plate)
    ½ bunch of parsley
    2 big salts of spoon (or to taste)
    1 spoon of pepper
    1 spoonfull of dry oregano
    2 spoons of cumin
    2spoonfulls of “Ají para seco” or paprika
    5lt of water
    Sides:
    Lime
    Plantain chips
    RECIPE:
    In a big pot add all the chunked vegetables, spices and albacore, cover with water and let boil for around 30 minutes, remove the fish from the pot and let cool down to later laminate it with soft pats.
    In another pot boil the cassava with a pinch of salt until it’s completely soft, then chop it into small chunks.
    Remove all vegetables from the broth and strain the liquid in a third pot, blend all the vegetables with some of the broth.
    Strain what you blended back in the pot with the rest of the broth.
    To make the broth thicker blend a small portion of the cassava with some of the water where it was cooked, add “Ají para seco” (or paprika) for color and more flavor, mix with the rest of the broth.
    To plate: First add the cassava chunks, the albacore, broth, onion and cilantro finely chopped. Lime and chifles (Plantain chips) as sides.
