    My delicious Guatita recipe:
    • Guatita Ecuatoriana
    INGREDIENTS:
    1lb dry peas
    ½ red or yellow onion
    ½ green onion
    3 garlic cloves
    2 green bananas or plantains (not the same)
    ½ lb cheese
    ¼ lb milk curd (cuajada)
    1 cup milk
    Oil
    Salt to taste
    ½ tsp pepper
    ½ tsp cumin
    Water
    RECIPE:
    Soak the peas in water overnight.
    Chop the onions and garlic very fine.
    Peel and cut the green bananas (or plantains, they’re not the same) in small dice.
    In a pot add a dash of oil and annatto paste. Add the chopped vegetables, sauté then add the peas and cover with water, add 3 cilantro stems, salt pepper and the green bananas.
    Cook for at least 45minutes on low heat.
    Check the peas are cooked, add the cheese, cuajada and milk, taste the salt. And let cook for 5 more minutes.
    Serve it with some chopped cilantro and diced cheese. From my kitchen to your table. Bon Appetit
