- It's mother's day so we have a surprise for Tía Yase. Steak with mushroom and red wine sauce, sauteed potatoes with garlic, parsley and lime juice and delicious roasted broccoli.

My patacón soup recipe:
• Sopa de Patacones
INGREDIENTS:
1 steak
1lb small potatoes
20 mushrooms
½ broccoli
6 garlic cloves
¼ yellow onion
50g butter
1 cup red wine
1 handful parsley
½ teaspoon sugar
1 teaspoon paprika
1 spoonful cornstarch
1 lime
Salt
Pepper
Olive oil
RECIPE:
Wash the potatoes and broccoli.
Cut the broccoli in medium florets, season with olive oil salt and pepper, set aside.
In a pot with water and a pinch of salt, cook the potatoes until they’re almost done. Around 7 to 10 minutes. Don’t overcook them.
In a pan add olive oil, diced yellow onion and minced garlic, sauté and add the potatoes. Add chopped parsley, paprika, lime juice, a pinch of salt and pepper. Cook on high heat for 4 minutes mixing so it doesn’t stick.
Preheat the air fryer (or oven). Cook the broccoli for 10 minutes at 400°F until they’re nicely roasted.
In a pan add olive oil and let it heat up. Add the steak seasoned with salt and pepper. Let it sear on each side for 2 minutes without moving it. Flip again, add butter and 2 lightly crushed garlic cloves, baste the steak with the butter, cook on medium heat for around 7 minutes total. Depends how you like your steak.
Let it rest and on the same pan add a spoonful of minced garlic, sauté and add sliced mushrooms let them cook together for 2 minutes, add red wine and mix well on medium heat.
Mix cornstarch with half a cup of water add to the pan with half a teaspoon of sugar. Taste the salt and pepper.
To plate laminate the steak, add the roasted broccoli, the sautéed potatoes and the mushroom sauce on top of the beef.
