- Learn how to make Peaches and Cream! There is no simpler, or more delicious summer dessert than peaches and cream, so it’s kind of crazy I tried to make it better, but I did, and it didn’t work. Hey, it might not have tasted any better, but at least it was more complicated. Ultimately, I show you how to make the classic version. Every recipe that involves "cold fresh water" I get more and more worried I'm never going to find a use for the hot, old water I've been saving.

The fact that Chef John isn't afraid of showing his mistakes is one of the reasons I enjoy this channel so much. It shows that even actual chefs can fail in the kitchen and that you shouldn't be afraid to try new things.
I'd like to mention that the peach syrup mixed with soda water would make a delightful peach soda pop.

😂😂 As a young kid, I always had my version of "peaches and cream" made with canned peaches and evaporated milk. Put them in a old clean mayo jar. Shake. Let it get cold. Pour over a bowl of Capt crunch. Eat while watching mystery theater 3000. Those was the days. 😎🤗🤗😎

What my grandma has done for me over the years is this. And it makes a great treat as well and is a but more on the cold side.
Peel and slice the peaches the way you do here, but instead of cooking she does this.
Put the peaches into a microwave safe freezer bag with a bit of water and sugar, shake, and then freeze the Peach mixture until the syrup is ever so slightly thicker.
When ready to use,
Thaw the peaches in the microwave for about a two minutes each or until you have a slightly slushy texture. Or whatever you prefer.
Spoon the peaches and however much syrup you want into a bowl and add heavy cream.
By the time you've finished the peaches, the heavy cream is whipped up just enough to make a light whip and to me it's very good!
I rappreciate that you tell us when a recipe isn't that great. It lets us know that when you say it's good, you really mean it.
Good chefs show you how to do it right. Great chefs show you how they screwed it up first and then they show you how to fix it. That's a good teacher. Well done.
I grew up surrounded by peach orchards. I loved peach season when we could slice peaches and pour cream over the top for breakfast.
Chef John, I absolutely love the way you always show your food wish failures when you make one. That way we can all learn from your mistakes. Most celebrity chefs don’t have the humility to do that. Never change.

I also love FIGS! My fig tree is making lots of figs and they are ripening right now. YUM! In the morning I go pick and eat breakfast right off the tree. I also collect them to cook down for preserves. LOVE THEM SO MUCH!

Not to not learn from your mistakes, but what about a mix of cream and creme fraiche-a slightly thicker consistency plus a tartness to complement the sweetness of the peaches in syrup?

growing up, i had this little dwarf peach tree in my front yard, but it gave enough peaches to last the whole block all summer long. my grandfather always made me peaches and cream, but he did it differently:
in this order: get a bowl of vanilla ice cream, and sit it on the counter. take a "medium-sized" fresh peach (i.e. the biggest damn peach you can find in the store that is both very aromatic and has a little give when you put pressure on it... yes, use the whole peach... no, you don't have to eat it all now) and slice it up- the ice cream should be a little soft when you're done... pour in a splash of milk, dust with white sugar. spoon it with a little milk, ice cream, peach, and sugar in each bite... put the inevitable leftovers in the fridge for later, where it will just improve over the span of the evening
the milk makes it less super-sweet, smoother, and more creamy, the sugar crystallizes into chunks with the flavor of the vanilla and peach so it's a bit like rock candy
not sayin' chef john is wrong... but this is the peaches and cream i grew up on

Loved this video Chef John! Thanks for sharing it - nice to know we aren’t the only ones who have kitchen “fails”. For years I have made James Beard’s version of peaches n cream. Sliced fresh peaches and fresh blueberries sweetened w/ a little brown sugar and cinnamon served in a bowl w/ heavy cream. My whole family loves this simple summer treat. One time served it to a couple who’d just returned from a cruise and it blew them away, both saying it was like the desserts served on their cruise. LOL!
I'm lactose sensitive and cream is a huge no no so I won't be eating this anytime soon but it looks delicious and I'm glad you uploaded your "failed" version too. A lot of people can't admit their mistakes. Cooking is so much trial and error, even the best mess up sometimes

I remember eating a lot of super sweet peaches when I was little. Not so much in the last few years though.

Peaches have been industrialized in the same way as tomatoes. They've been bred for faster, more productive growing, losing a lot of variety and flavor all in the name of satisfying the shareholders. If you can manage it at all, buying local and small will usually get you better food.
Don’t smoke too much
If you can get any California peaches or nectarines this year, they are delicious. There's some coming out of California that are blowing my mind. Strangely Costco is selling them
