  • It doesn't get simpler than Jacques Pepin's peach melba recipe. In fact, if you're in the mood for a treat but don't feel like fussing in the kitchen, this peach melba is just the ticket as it's more akin to assemblage than cooking. This dish was originally created by the French chef Georges Auguste Escoffier for the Australian soprano singer Nellie Melba.
    What you'll need:
    1 ripe peach (white, if available), slice of pound cake, scoop of vanilla ice cream, raspberry preserves, toasted sliced almonds, sprig of mint
