As the recipe is, it is a bit acidic. Great idea on the water and apples. Could add a little water and possibly some more sweetner of your choice. Might try a little honey and additional water.
In England, we just add vinegar and pepper and refrigerate for 30 mins, we also do it with sliced onion. Make a great quick pickled cucumber and pickled onion. Fish and Chip shops leave a bowl on side of the counter to sprinkle on your F&Cs.

If you prefer crunchy cucumber salad , prepare it just before meal, otherwise it becomes limp and soggy a day after .
