    This is typical accompaniment with any fried fish or meat in Philippines . . . .in our house from when I was a little girl in the 50's till now (75 years old now) .

      I grew up on this type of salad=side dish in America. We used celery seed instead of sesame seeds. Since we always had a garden, we added diced red tomatoes and whatever else we had a toast for.

    In England, we just add vinegar and pepper and refrigerate for 30 mins, we also do it with sliced onion. Make a great quick pickled cucumber and pickled onion.
    Fish and Chip shops leave a bowl on side of the counter to sprinkle on your F&Cs.

      Yup, no fuss!
      Just seasoned rice wine vinegar and pepper added to the sliced cucumbers , refrigerate 1/2 hour before meal.

    I don't like vinegar taste, so I changed it with lime/lemon juice. Taste so fresh, especially after chill in the fridge.

    In Japan, this dish is categorized as Su-no-mono (酢の物), the vinegared dish, one of the side dishes, not a salad. As we always eat the plain steamed rice with it, the strong acidic taste won't be so overwhelming. It means to be refreshing.

      Atsuko. Thank you for the information. My children take Japanese is school and they will love this. You are correct, this is a side dish but for youtube purposes I had to name it a "salad" or it would never be found.

      @@atsukorichards1675 3 years of middle school Japanese with an amazing Sensei who makes it really fun. They like tempura, yakitori, ramen, and of course mochi. Looking forward to going to the large "Japan Fest" coming up soon near our city.

    Do you know what is the difference between this and the Thai cucumber side dish? I know it has red pepper flakes instead of the seeds.

      Monique - great question as I am going to film that salad soon. With a Thai cucumber salad it contains fish sauce and usually some type of "spicy" pepper like Thai chiles. Little more umami flavor with the spicy kick. Love both salads. Sub and you'll be notified when that video comes out. Thanks for the question!

    In Malaysia also has this kind of dishes. We call it jelatah. Other than cucumber, we add thin-sliced onions with or without sliced pineapple. For those who likes spicy, they add sliced bird eye chilli.

      Sure. You can use apple cider, champagne or white wine vinegar.

    Seeds are where all the nutrition is stored. I don't remove them from anything. This looks tasty :) Where's the Vinagar?

      Don't disagree with nutrition in the seeds but sometimes we are working toward a visual look also. Check out my other cucumber recipes where we keep the seeds in. Is tasty, there is 1/4 cup of rice wine vinegar. Thanks for watching!!

      It is a Feemster slicer. My mom has one and so do I. Legend has it they were invented by pioneering women out of Bowie knives.

    this salad is good for any fried dishes. fish . chicken or pork. hard to find sesame seeds.. instead i put 2_ tble spoon of sesame oil..

    I want share some of our Philippines salad also I hope some readers will like them.
    PHILIPPINES CUCUMBER SALAD:
    cucumcer
    Vinigar
    Salt
    Sugar
    Ground black pepper
    SHRIMP GREEN MANGO SALAD:
    Shrimp cook
    Green MANGO
    Cilantro
    Cucumber chilli flakes
    Vinegar
    Sugar
    Salt
    Black pepper ground

    Jpnz cucumber salad...w/ English cukes? I use 6 Jpnz cukes for this salad. Less water & seeds. Add salt to sliced cukes to release h²o. Toss. Wait 15-20 min. Squeeze slices to drain more h²o. Add rehydrated dried seaweed (Wakame, sliced variety). Again, squeeze out the h²o b4 adding to the cukes. Next add slivers of crab(or imitation) meat. Slivered ginger root is optional here but adds another dimension. Use the sesame seeds but don't toast them. Makes the salad look "dirty". Instead add 1/4 tsp of toasted sesame oil to 3/4 cup Jpnz rice wine vinegar & 3/4 cup sugar. Make this dish & refrigerate the night b4 to let ingredients meld. Not so simple recipe but I always get nice reviews whenever I make this. Especially appreciated during the summer. Refreshing to say the least. Will keep till u eat it up. A week?? The vinegrette is a preservative.

      I use English cukes if I cannot find the Jpnz variety. My mom used regular cukes & added head lettuce if she didn't have enough cukes. Pickling cukes would work also. I stay away from the Persian variety, too much h²o. That's all folks. Give it a try...a splendid time is guaranteed 4 all. (Sorry John & Paul)

    Easy to clean mandolin, easy to cut the tips of your finger off too! That’s why that style is not available any longer. Unsafe. Ha !

      actually Vic. The cutting area is not sharp enough to cut yourself unless you push extremely hard. More dull than a knife so if someone can handle a knife, they can handle this. Oh, by the way, it still is avaiable. HA!

    I made this, very good. I added a half tsp of sesame oil and some black pepper. I never eat anything savory without black pepper and I notice that you seldom use any.

    English cucumbers are seedless.

      Yes, they are called "seedless" but in reality they still have underdeveloped seeds in the softer part in the middle. I know because I cut them out every day for one of my kids who 'hates seeds" no matter what form they are in.

      Yes, it could. Here is how to make it 3 minutes. Use the speed control at 1.5 or 2.0x that should make it about 3 minutes! :)

    Thanks I made this and it was really good. But I found it too acidic. I later put some water and apples in it and that helped. Any thoughts on how to make it less acidic.

      As the recipe is, it is a bit acidic. Great idea on the water and apples. Could add a little water and possibly some more sweetner of your choice. Might try a little honey and additional water.
