Which Coconut Products are Good or Bad (Coconut Milk vs Coconut Water vs Coconut Oil)
Coconut, COCOnut, COCONUT!!! Coconut oil, water, milk, etc etc etc. That's all we hear. Take this coconut product. Take that coconut product. But how does it impact you when you are on a Low Carb/Keto diet? There is alot of science to get into! Lets dive in and I'll see you in the COMMENTS!!
Coconut water is the translucent fluid found in the core of young coconuts. It is sugary with little-to-no fat (all other coconut products are fatty) and full of electrolytes. If you’re on a low-carb diet, avoid coconut water. If not, it’s a great substitute for Gatorade.
Coconut milk comes from the fatty flesh of the coconut and is made by boiling or blending the flesh with water in about a one-to-one ratio. Great for curries.
Coconut cream is basically the same thing as coconut milk, except the coconut meat-to-water ratio is about four-to-one. Great for desserts.
Coconut oil (refined) is pure coconut fat, just as olive oil is pure fat from the olive fruit (yes, both coconut oil and olive oil are, technically speaking, fruit juices). If it’s not labeled as “virgin” coconut oil, then it is refined, which means the oil may have been heated, bleached, and/or deodorized. This doesn’t just sound bad, it is bad. The refining process strips the oil of over 80% of its healthy disease-fighting polyphenols and generates cell-toxic hydrogen peroxide.
Coconut oil (virgin) hasn’t been harmfully treated with heat or chemicals, like its abused sibling. This means it contains about seven-times more healthy polyphenols as does refined coconut oil. (Examples of virgin coconut oil polyphenols for your googling pleasure: caffeic acid, p-coumaric acid, ferulic acid, methyl catechin, dihydrokaempferol, gallic acid, quercetin, and myricetin glycoside.)
Furthermore, and this is IMPORTANT, while the majority of the scientific literature on the impact of coconut oil on cholesterol and heart health reports neutral-to-harmful effects, this umbrella view does not distinguish between refined and virgin oils. Interestingly, according to a brand new (at the time of this writing: January 2020, doi: 10.1016/j.mad.2020) review article on coconut oil, published in the journal of Mechanisms of Aging and Development, the two studies that have used virgin coconut oil report significant elevations in ‘good’ HDL cholesterol and no changes in ‘bad’ LDL cholesterol, while all other clinical reports using refined coconut oil report increased ‘bad’ LDL cholesterol. (As an aside, LDL is not completely bad, but that’s a topic for another post.)
The takeaway is that refined coconut oil is probably unhealthy, whereas virgin coconut oil is probably healthy. Processing matters! Please choose virgin!
Coconut Butter (raw) is simply whole coconut meat that’s been drained of water and ground into a pasty substance, similar to peanut butter. I’m going to go on a little bit about this one because (i) it’s probably the coconut product you haven’t heard of before and (ii) it is the best coconut product around for nutrition, versatility, and taste! By the way, that’s a fact, not my opinion (wink, wink, nudge, nudge).
Nutrition. Because it’s whole coconut meat that has not been roasted, toasted, heated above 118°F (that’s what “raw” means), it contains the same healthy polyphenols as virgin coconut oil, plus fiber and protein. But make sure to get it labeled RAW.
Versatility. Melt it and drizzle it over yellow squash or berries. Use it as the base for curries and stews. Use it as a dip for chocolate or macadamia nuts. Simply toss it with your favorite neutral protein, like shrimp, chicken, or tofu and give it a quick stir-fry. Blend it in a smoothie. Make coconut ice cream. Or, my favorite, eat it with a spoon!

"Add coconut cream in late to your cooking or it will separate . . " O_O
I've made curry several times and let my chicken simmer in coconut milk/cream and had no idea why it turned from creamy to soupy, oily mess. Never thought it would separate. Thanks for the tip!

    • @MochaZilla

Facts! It seems that most things are processed in some way. Even peanut butter made from fresh peanuts in the grocery store (in those fancy nut butter dispensers) undergoes the "process" of grinding.
I dont think its so much an issue if things are processed, but rather the level of processing that something undergoes (how does the processed food resemble its orignal state?)

That's why it says coconut beverage on all of the containers. It has to be a certain percentage of pure coconut to be called coconut milk or coconut water otherwise they have to label it coconut beverage. It's like processed cheese food, only not as bad for you because the ingredients don't include toxic oils like Velveeta does.

Actually they can't call it milk because the dairy industry won the battle of what to call dairy alternatives. Milk has to be from a mammal. A bit like how you can't call fizzy alcohol champagne.

Thomas, I am so glad you brought up coconut butter. I've been using it for a few months now and I love it! I can't have other tree nuts or peanuts because of the high nickel content, and was really missing something that filled in that gap in my diet. I saw someone do a recipe using it and went hunting for it. It wasn't easy to find, so I convinced my favorite healthy grocery store to carry it for me. They really are great at the Healthy Living Market.

Thank you for breaking down the difference between the oils. I always make my own coconut milk with the canned stuff. I'll take the can of full fat coconut milk put that in the blender with about four cups of water a little bit of vanilla extract and a little bit of monk fruit sweetener or stevia. And I love love love coconut butter You can take the unsweetened coconut flakes and blend those up to make coconut butter without any additives including sweetener it has its own natural taste to it it's phenomenal

It's dirt cheap here (Holland) compared to supplements. The other salts come from the ocean, the salt is called La Baleine Essentiel.

I've done the Atkins back in my 20's and it worked well, but rather strict. Now at 50, I wanted to modify my diet to include fat burning but more complete diet with real honest information and an education to go with it. I'm completely happy I found a Thomas DeLauer video this past weekend. Everything you talk about sounds accurate to my logical engineering mind. I'm 5'10" @ 235#. My goal is 175#-180#. I've already begun going through my kitchen removing high carb foods and replacing them with low carb foods, I've bought Keto strips for testing, Boron and Chelated magnesium for my gut. I"m planning on a two week transition to full KETO diet by the end of the Memorial Day week. I am going to scour your videos for a blood sugar test as well as breath testing devices. If you have not done a video yet, I"d like to see on on blood & breath testing devices. I"m going with you as my mentor for this 3rd season of my life. All the best..!

Hi Will. I am also an engineer who dropped down to 172 from almost 200 lb. i am 5’10” as well. I suggest doing keto as long as you can while reducing the daily calorie intake while doing Intermittent Fasting. If you can do that another two weeks and eat once a day with 500-600 cal. a day, that means you can handle Water Fasting for several days. That gives me 2lb a day fat burning. Just an FYI.

Thomas is good. NOT GOSPEL!!! He still makes his money off being salesman for all these companies he recommends. Also check out Dr Berg. Dr Barry for sure. Keto Rewind good lady. I went from 6’3” 315 to 210lbs. About 13 months. Dirty keto 1st sixty-five then started cleaning it up. Redmond’s real salt a must. Potassium a must. Magnesium a must. Boron good for men. Releases already occurring testosterone in your body. 9 mg day. Intermittent fasting is a glorious thing. Delve into it slowly. You’ll be amazed and glad you did.
You really don’t need all the testing devices. I got them. But to be honest the color and smell of your urine will let you know if you’re in ketosis.
      Good luck gents.

@@rueridge7597 , Lol on the dirty KETO. That's how I started on the Atkins...30 days of sirloin steaks on the grill...! That is why I'm looking for more food education, although I"m trying to stay out of information overload. The Boron arrived last night, and I'm now doing research on my first fast. Black coffee, Black tea or green tea and I can live on that for the better portion of a day. I'm okay with Thomas being a salesman for those companies. I grew up in rural chit hole Pennsylvania and there was no quality food, so if mail order is the only way to go to get food and vitamins, then more power to him and anyone who rely's on this pipeline to get you believe in. Yes after losing weight using keto I am finding that certain foods are still useful for healing that are not kept. Like pineapple, berries, beans, etc. Being as though I was raised Vegan it’s what my body is accustomed to being on Keto caused major constipation even with 8 cups of greens a day I was still messed up. So now I am trying animal protein keto every other day switching between plant based keto and a 24-48 hour fast I always do. So far on this diet my constipation has went down drastically. It’s not just about weight loss it’s about health. Do what your body wants. I bug my body. I demand and expect it to tell me what it needs and eventually it comes through.

Agreed if u're talking about the food industries packed coconut drinks, but not if you're pointing at the real coconut. I always prefer coconut water by self-extracting from the the real coconut fruit itself, it has always been my main potassium intake because of its high k content by nature and it is also anti-bacterial, full of goodness. so if its packet/carton/bottled juice, you can have doubts about its content, but not the real one, the real one is a Godsent.

They seem to be hard on my belly and make me slightly sick sometimes. However, there's something about the coconut products that I really like. Great for frying etc. I used to eat two cans of coconut cream a day during my paleo days.

What if we heat Vergin coconut oil or coconut butter for cooking. Will all the goodness remain? Because you are saying it is good as it is not heated.

I've seen claims that, for virgin coconut oil, whole kernel coconut oil is even better than white kernel coconut oil.
    Whish he had addressed that.
(whole kernel coconut oil apparently includes the brown inner membrane of the coconut in the oil pressing. White kernel coconut oil removes this before pressing)

Can confirm that coconut butter is great, but it’s also a bit, um... Rock-like. I haven’t quite figured out how best to warm it up into a spread, and it sounds like heating it isn’t the best option.

Really depends on the smoothie ingredients. The typical smoothie isn’t going to be, but you can make them lower carb and higher fat.

Coconut water (from the right companies!) is super healthy for you. You don’t have to use the whole serving and cut out some of the carbs. But sometimes getting those whole super foods is more important and better for your body than just totally cutting out whole food groups with no exception. Esp when the comparison is to instead use Gatorade which is sooooo bad for you with sooo many toxic cancer provoking chemicals 😬. I hope you keep 🥥 in your smoothies 💗

Coconut Butter sounds like something good to add to our lives. You make mention of getting it raw, that that it isn’t heated. But when I use it for making cookies, I will then be heating it. Will I be making it less beneficial when I bake cookies when using the Coconut Butter?

I thrive off unrefined virgin organic coconut oil expeller pressed. Big tub at wal-mart. Have started to just put a glob in my coffee again, and stopped mct oil, due to mild nausea.
