Hello Doc, thank you first and foremost for your great education. Have had my dad of 82 on keto now for about 24 days, but fir some reason he is feeling weak and sometimes dizzy. He has given up beer and proud of him but has not quit his smoking of 66 yrs. Only medication he is taking is water pills to help his blood pressure stay down and Lisinopril. Any recommendations to stop dizziness? Have been on keto now for 20 days and goal is 30-45 days to see how it feels like being fat adapted. Thank you

When you find out vegetable oil isn't made from vegetables. And the American Heart Association's first big funder (coz people didn't have Heart problems therefor not much funding) was the companies that make industrial seed oil

When I was graduating medical school, during the speech before handing out the diplomas, the dean said something that stuck with me forever and is the quintessence of a good physician - “ if we have taught you ONE thing, I hope it’s that you know what you don’t know”.

I've had to fire several of my hubby's doctors, one for medication errors that she blamed on us, and one for fabricating discussions with us that I discovered when I requested a copy of our charts, as well as 2 of mine. Good doctors are open to learning, even from their patients

My mother used butter for everything. Most things were baked she never made fried chicken etc... She told me very simply " the body knows what to do with butter but not oil". A very simplistic statement but basically what this man said minus the science. Vicki

Remember that used to tell us of margarine was better than butter back in the 70s and 80s? My mother used to buy margarine because she believed that and now we know that's not true always use butter I never use margarine

On top of the oil, the unnatural chemicals in fast food is ungodly. Fast food isn't food at all.

My heritage is Amish. I have returned to the cooking methods and products of my ancestors. Ghee. Tallow. Lard. EEVO. Coconut. Butter ETC Growing an organic garden, canning, etc. Your information is so cathartic!! I LOVE IT when I'm right 😍❤
From some of the comments from highly trained professionals, it's scary to think how misinformed they were by all their formal education, then passed on to their patients. Glad to see how this better information is increasing awareness even among practicing physicians.

Its not their job to teach this. Doctors/teachers usually just stick to what they are trained to teach because they have accountability in giving wrong info when they are paid to teach or heal.

I had issues with my gallbladder for the past year, they said I was going to have to get it removed, no stones, just pain. I ended up cutting out all vegetable oils and only using lard and tallow, and I haven't had any pain or issues in the past 2 months. I'm not sure why this is, but it worked!
Did you make any other lifestyle changes that could also have had an impact? Or just switching oils?

Crazy how we are decreasing our life span and life quality with these insane food processes. I feel like this man is literally saving people here. I am very grateful for all the time he put into this to help people.

Ayurveda from india which is more than 5000 years old always recommended ghee and coconut oil as a cooking oil

i have for the past year and a half been eating almost exclusively beef fats butter and eggs for all my fat intake and i recently got my heart checked out, everything is perfect my blood pressure is consistently around 110/59 and ive actually leaned out quite a bit. Cutting out all the soy and canola oil's really does wonders for the body

I've always used butter and olive oil. Since I've been buying my meat from a local farm, I asked about beef tallow. I've read some amazing things about it. It's easy to render down. I use it in place of butter for a lot of my cooking. It really flavorful. I also use pork lard.
@jakarreh Na I actually don't like the taste of olive oil So I don't use it, I basically put crumbled cheese and salt on salads sometimes vinegar dressing that doesn't have seed oil

@@garryrowland Yeah, he's a real 'Debbie Downer' when it comes to avocado oil, which I have been using. I'm going to read up more on ghee and perhaps make the switch. My only complaint about Dr Ekberg is that his belt is too long 😄

I live in Finland and I had no idea what our equivalent of vegetable oil was. I googled and vegetable oils here are almost entirely just canola oil. Really 90% of all cooking oils in the stores are olive oil and canola oil. I have always only used olive oil. I love it on everything I feel I might have some mediterranean genes in me because I could have olive oil on my ice cream…
And italian/spanish average life expectancy is almost 84 years and I believe it’s because fish/red meat/olive oil is like 90% of the fats in their diet.

I am from Croatia,here ,90% of cooking oil is rafined sunflover oil.
I didnt see in any store rafined, or cold pressed canola oil.
Here in the US canola oil is considered a step above vegetable oil. However obviously olive oil is better. Now I'm hearing that macadamia nut oil maybe even better for health with a higher smoke point for cooking.
Czech Republic, Canola is very common, Sunflower is popular for salads. Lard is quite popular with bread (i guess bread which is common in former austria-hungarian monarchy, not the white one) or for frying.
Here in Spain Olive Oil is everywhere, for salads, for cooking, or just with bread, however sunflower oil is cheaper and is also very common but only for cooking dishes wich require a fat with less flavour or a very high temperature.
My friends always smile when I tell them about the saturated. The old way of thinking is so deep rooted

I live in Holland and I can get butter from grass fed cows. It is softer and tasts better tan ordinary butter.

In Finland those things containing poison oil get a special label. Unfortunately, that label is called "heart label" and are given to products that substitute butter with seed oils (usually rapeseed). It goes beyond ridiculous to furiating since the heart label is given as well to things like cookies, pastries and other industrial waste products high in sugar, white flour and flavour enhancers. Sugar, wheat and seed oils, now what can go wrong with that :D

I just began cooking with Ghee. It gives the food a nice flavor. I'm glad it's on the "good oils" list.
The only concern about Ghee, is that saturated fat helps create plaque and then the number 1 cause of death worldwide, atherosclerosis
A great Spanish nutritionist, Dr. Sánchez Cobian, many years ago, when asked if the famous Mediterranean diet was the best, he replied that he only recommended three things: use olive oil, eat little of everything and always stay with a little hungry...
As an Indian, I have cooked exclusively in Ghee, Butter, Coconut and Filtered Groundnut Oil. My ancestors put a few thousand years of research into this. And you too have concluded similarly.
Your ancestors were also well known for their historic mustard seed oil, which is a seed oil. In fact I would say India is tied with China is the largest pre industrial producer of seed oils. Though back then they cold pressed it.
@@Frenchfrys17 Cooking with Cold Pressed Mustard Oil would have been a luxury very few people could have afforded in the preindustrial era. Very difficult to extract and even more difficult to store. Mostly used in making Pickles, instead of cooking.

I already been using olive oil, coconut oil and butter only, but you explained correctly why not to use for cooking the rest of them, unfortunately the corporation in order to make profit before health are just maximising the end product to something its not food anymore.

In Europe good quality olive oil is everywhere.
We can get it on farmers markets, in supermarkets, in organic stores.
From different European countries and islands.
As you perhaps know, French fries were invented in Belgium. Before 1970/80 they were fried in tallow, because that was the fat they had. A big drawback was the fact that when the fries cooled down the fat solidified and made the fries stiff. They had to be consumed quickly especially in winter. So the “friteurs” were very happy with the new cooking oils!

French fries atleast in the us is derived from a common west african fried plaintain dish which, like you mention, were fried in animal fat. Oddly enough a common dish in nigeria is plantian and chicken both prepared identically to the american equivalent hence the "southern" and american story of chicken and fries:) .
Use duck fat or goose fat and it will not go into the product you fry, found out by accident because you have to filter it after use and the amount stayed more or less the same after using but it has to be stored in the fridge. Lived in France for 24 years and the people in that knew.

You know so much about nutrition Dr. Ekberg! Thank you so much for taking the time to create these educational videos, because we live in a sea of misinformation and so many people really don't know what we should and shouldn't eat. It's too bad that some of these foods are even legal, and that companies do things like change serving sizes in order to satisfy the law. My health and I believe, even my mind, has improved dramatically since I started watching your channel less than a year ago. I believe you are saving lives, and possibly even mine.

I am glad someone finally talked about Ghee and Tallow. How and where do you grade walnut and peanut oils for cooking. it has been used for cooking in Persia and India for centuries but not at high tempretures. mustard oil has been used for frying. Furthermore, how is sunflower oil for cooking.
Part of it is how long to store the oils before they go rancid.
Peanut oil is trash. I never seen walnut oil though. Walnuts in itself have the highest omega 3 in nutz i think. But like the doctor said, it might nut matter when it is turned into an oil.

I can’t believe I was duped into thinking avocado oil was a good cooking oil. I now have the motivation to take back two half gallons I bought from Costco. They sell a lot of crappy oils. I saw that you have a video on what oils to buy at Costco, so I’ll check that out. Thanks for the info.

finally found someone who actually said it: our body fat doesn't come directly from the animal fat we eat. mostly that fat comes, like in the case of animals, from sugars which we are fed by the food industry in pretty much any processed food. Amazing video and greatly informative. keep up the good work!
the 'you are what you eat' meme so appealing that it leads people to avoid catfish just because they are bottom feeders.
Out body comes from an excess intake in calories .

Shame that is wrong and the wrong way to look at it. As with everything it's more complicated than that. The body uses the energy in carbs first (well after alcohol) as they are easier for the body to break down. So if you eat excess calories then the last to be left is the fat. Yes if you eat too many crabs ultimately they will be turned into fat but it's less efficient that simply depositing the fat. I understand that it takes about 30% of the energy in the carbs to turn them into fat.
Also fats have 2 time the calories to carbs by mass, so they make it much easier to go over the number of calories you need to survive and thrive.
As volume plays a part in the feeling of satiation, you can eat twice as much in the form of carbs and feel fuller and have less calories (preferably whole carbs not processed carbs).
So, yes you may get fat by eating too many calories in the form of carbs but it is easier to get over the amount of calories you need in a day with fats and if your over that tipping point it''s the fat over that point that will end up on (or under your ribs).
Yes this video make you feel good about your bad habits and help you avoid Omega 6's and some oxidative stresses, that is about all.
I mean it's not a secret, that's literally stuff taught in schools. Has anyone ever said that your body fat comes from oils you eat? Like ever? The issue with oils is how much they affect overall health, not the body mass.

I airfry as well. Use a refillable pump spray filled with olive oil to crisp up the outside. Not the same as deep frying but way more convenient and healthy.

We've come full circle as a species - tallow, lard, ghee and butter fed our ancestors for eons without any problems. I use these extensively - all my vitals are perfect.
I don't care much for coconut and olive though. My go to ref salad dressing is cold pressed avocado and macadamia. Even cold pressed palm FRUIT oil (red in color found in West African native stores) is full of Vitamin A. Don't fry with it though - just add after cooking.

My best cooking oils as below..
1.Cold pressed Coconut Oil
2.Blended Physically Refined Rice Bran Oil (80%) with Cold Pressed sesame Oil(20%)
Cool. I had just bought some ghee which is relatively new in our home but I'm happy to see we're making the right choices... that's added to our standard EVOO and butter. The only thing i think is refined sunflower oil which we've been using for frying and is now on its way out. I'll use ghee for stir frying and browning; olive oil for seasonings and butter, animal fat or olive oil for stews, soups and other techniques that don't require to go over 100 C
This is the in depth knowledge, needed to be taught in our medical schools.
Why would they do that! Their aim is to give us the wrong information so that we get sick and die off slowly so that we can pay for their drugs!
And high schools!!
Unfortunately, medical schools are "run" by big pharma to mislead so they can continue to make people sick in order to stay profitable!

If we think the last 18 months has been difficult, wait and see what's coming in the next months and years! By 2023, we should see the light at the end of the tunnel, but it will be for some the final days of their timeline for both sides.....we must stay strong and true to our hearts and know that knowledge and awareness is indeed power! To anyone skeptical of his views on oils, may I remind you of the years past when the US Government strongly endorsed the food pyramid, or when breast feeding was seen as bad from the 1800's till the 1960's, or the fact that our FDA still approves artificial food dyes that are banned in other countries because studies have shown a correlation between ADHD... yet we wonder why 1 out of 10 kids has ADHD. The fact is simple, in the overall span of time that we've been humans, we've spent over 99% of our existence as a species eating unprocessed natural animal fats. I'm sick of living in a stupid insulated box of bullsh!t that has been fed to us, just like Christopher Columbus in schools.

I paused and checked my Chosen brand avocado oil. The label says naturally refined. The color is light yellow, no green at all.

@@mcdianer not sure about the natural refinement process. He said it should be green, not yellow or light. I will probably use it for non heat cooking, doubt I will buy another bottle.
Ghee doesn't have to be expensive. It is so easy to make yourself. You just heat up butter on low in a crock pot with some water added. Let it melt hit temperature for an hour or so, then stir it a bit and turn off the heat. Once it comes back down to room temp, put it in the fridge and let it cool overnight. The water and solids will fall to the bottom and the oil (or ghee) will float to the top. Once cooled, you pop the solid ghee on the top out and discard the water and milk solids below. Then heat the solidified part up one more time to let all the water evaporate. Once it stops bubbling, the water is all gone. You'll lose about 1/4 or so of the total amount of butter you started with, so don't be surprised if three sticks of butter only makes 3 sticks worth of ghee. Now you can put the ghee in a container and it will last for months in the fridge!
Looks a bit complicated to me. How abt just melt the butter with low heat and let the milk separate to the bottom. Then just pour down gently cleared butter..

@@terranceaddison4599 Unsalted butter, water and heat. In a crock pot, on its lowest setting, add a cup of water per pound of butter. Melt butter and stir every little bit for an hour or so. Mixing it actually helps pull the solids out of the fat. You'll see it separate into the clear, light yellow ghee on top and the cloudy milk solids and water below. Then, take all the melted mixture and put it in a container in the fridge until it hardens. At this point the ghee is on top and the milk solids and water will settle at the bottom. Once hard, take it out and remove the solid mass from the container. It helps if the container is shaped so its easy to slide out. Scrape off and discard the solids from the bottom of the block. What you have left is ghee! Its easier to make than it was to read this recipe. Just don't overheat it!

Of all of the information that you have introduced to me, the facts about oils and cooking with oils has been the biggest shock. Swimming against the tide is not going to be easy, but I have to make these changes in how I cook for my family, and just hope that others can accept it.

We Indians invented ghee for deep frying, but we dont deepfry vegetables like potatoes in it, we usually deepfry some type of doughs to make make some snaks or some desserts.

This is very helpful Dr. Ekberg. But there's at least one oil missing which gets used a lot in Europe: sunflower oil. Basically, if there's any oil in the product, chances are it's either canola or sunflower.
I'm guessing it's just as bad as canola, but it would be cool to have the Doc's take on it.
One thing we do have going for us though it's no GMO here ( or at least, it shouldn't be by law)
if its not made cold pressed and if there is alot of heat applied and refinement during production its bad.

@@clarawilkerson9903 if we go by the favour rule i'd suspect sesame oil is good to go! (plus it's usually added at the very end of the cooking so it should not heat up much)

Sesame oil is usually added for that smokey flavor, and not as a cooking oil.

Thank you for this great explanation. I was looking for this type of information because of a discussion around grape seed oil, that sadly is not listed here.
Grapeseed oil probably isn't listed here because it is even worse than everything else on this list.
I can agree with these findings just based on cooking being on keto. The primary oils we use are coconut and butter. Ghee is just too expensive for what it is. When we do fry we use lard and discard. Did learn quite a bit from this though... a person I watch mentioned frequently how he doesn't like vegetable oils, or soybean because it made him swell and sick - and this video explained why.
You can make your own ghee from butter my family does that we don’t buy ghee.

I start using my Walnuts to make my own coldpressed walnut oil for external and internal use from head to toe benefits.
I use the pulp for my worms, the green shell for iodene tincture and the brown shell for my fire stove.
If I have extra, I use the old moldy Walnuts as cooking charcoal. Nothing is waste.

Wow! Avocado oil (refined) info was a huge wake-up.
the best tasting (butter, ghee, olive oil) happen to be the best for you! Yeah! Coconut oil can be incredible too if you find one that doesn't have strong flavor (some don't) or if you like coconut flavor (I do) and want it in something. My cast iron pans are coated in years of these.
Ghee still contain some solids(protein and so on), the solids are browned and are there for flavor.
Clarified butter on the other hand is only the butter fat, all the solids are discarded.
You can see it if you melt it, ghee has solids floating in it, while clarified butter is clear and uniform.
There are two ways of making ghee. It can be made from Curd which is the best way to do it. The other way is to make it from the cream. The latter isn't the best way.
I make my own ghee and try to get all the solids out before cooking with it. I love it. I also use it as a lubricant for jar lids that get stuck and as a skin moisterizer in small quantities.

This is all making great sense to me now, and I was anticipating many of your points during this presentation, the final one being about Ghee. This explains why it is so popular in Indian cooking, because a fairly high temperature, fairly breif cooking of the various Indian spices is required to release the flavour(s) of the spices. We use ghee, cocoanut and sesame oils for cooking. Olive oil is only taken with salads.

Palm oil is most stable and only oil suitable for deep fried. Let's be open. Palm oil is the oil with highest content of vitamin E, antioxidant, carotene etc. Palm oil also best oil for environment, because most efficient, less land area with more volume of oil, no other oil come even close.
This was a very satisfying video. I don´t feel saturated as I could easily digest it because of the way you explained it. The oils I cook with, in the order I use most, are EVOO and coconut/ghee oil/butter. Thank you.
