3 Simple and Delicious Salads & 3 Oil-Free Dressings

  • RECIPES:
    Fig-Arugula Salad
    2.5 oz arugula
    1 cup mixed microgreens
    ½ cup cooked tricolor quinoa
    ½ cup quartered fresh black figs
    ½ cup fresh raspberries
    Cheesy Salad Dressing
    1 cup raw cashews (soaked for min. 2 hours)
    ½ cup hemp hearts
    3 tbsp lemon juice
    1 tbsp apple cider vinegar
    ¼ cup nutritional yeast
    ½ tsp onion granules
    2 tsp miso paste
    ½-¾ cup water
    1 date
    ⅓ tsp salt
    INSTRUCTIONS
    Prepare vinaigrette by combining all the ingredients in a high-speed blender and blend until smooth.
    Combine greens in a bowl, top with vinaigrette and toss to mix. Top with remaining salad ingredients and extra dressing. Enjoy!
    Spinach-Pear Salad
    INGREDIENTS
    1 yellow pears sliced thin
    1 red pears sliced thin
    2.5 oz baby spinach
    1 cup mixed microgreens
    ½ cup raisins
    ¼ cup pistachios
    1 avocado diced
    Garlic-Rosemary Vinaigrette
    1 bulb roasted garlic
    1 sprig fresh rosemary
    ½ cup walnuts
    3 dates
    2 tbsp apple cider vinegar
    2 tbsp lemon juice
    ¾ cup water
    1 tbsp coconut aminos or salt to taste
    INSTRUCTIONS
    Prepare vinaigrette by combining all the ingredients in a high-speed blender and blend until smooth.
    Combine greens in a bowl, top with vinaigrette and toss to mix. Top with remaining salad ingredients and extra dressing. Enjoy!
    Caesar Salad 2.0
    INGREDIENTS
    4 cups chopped lacinato kale
    1 cup chopped romaine lettuce
    1 cup chopped vegan bacon • The Best Vegan Mushroo...
    2 tbsp hemp seeds
    Roasted Chickpeas
    2 cups cooked chickpeas rinsed
    4 tbsp coconut aminos
    ¼ tsp garlic granules
    ½ tsp smoked paprika
    Caesar Dressing
    1/2 cup raw cashews (soaked for min. 2 hours)
    1/4 cup + 3 tablespoons water
    2 tbsp lemon juice
    2 tbsp nutritional yeast
    1/4 tsp dulse flakes
    2 cloves garlic
    1 pitted medjool date
    1/4 tsp pepper
    1 tsp salt or TO YOUR TASTE
    1/2 tsp parsley
    INSTRUCTIONS
    Prepare the dressing by combining all the ingredients in a high-speed blender and blend until smooth.
    Roast chickpeas by spreading rinsed chickpeas on a baking sheet. Bake at 400F for 15 minutes. Remove from the oven and add coconut aminos and seasons, mix. Continue to bake for an additional 10 minutes or until chickpeas are dry and a little sticky. They will become more crunchy as they cool.
    Combine greens for the salad, add some dressing and toss. Top with chopped mushroom bacon, chickpeas, hemp hearts, and extra dressing. Enjoy!

I got results from an echocardiogram, and I have a leaky value on both sides of my heart. One of the things that I can do to slow the process is plant based eating.       It's good that the issues were detected, and you have time to improve your condition. I suggest looking up Dr Esselstyn and buying his book. He has had amazing success with his program to reverse heart disease. Best of health to you moving forward!

    Hi Javant! I currently have a goal of eating 1lb of dark leafy greens daily as well as at least a 1/2 cup of ground chia and flax seeds for the omega 3's. For the first few days I did this by turning the greens into smoothies, because I thought there was no way I could eat all that in salad form. But your cheesy salad dressing sure proved me wrong! It is so so good! It really does have that umami tangy flavor reminiscent of cheese. It makes eating my giant bowl of salad easy and delicious. Thanks again, I love your channel. Everything you make is wonderful!!

    I have a question, I live in Detroit and there's a large number of residents who are becoming Vegan or already vegan, with more Vegan restaurants, shops, and bakery opening up in the city. It's really exciting to see and experience. Have you ever considered opening a brick and mortar, you will do so great with a restaurant with the current setting you have. Sort of like a cooking television show, but LIVE and in person.

    I believe the fear of oxilates is blown out of proportion! Just my opinion. From my readings and my understanding one has to consume truck loads for it to become a dangerous issue.

      I totally agree! The foods that they are most highly concentrated in ( spinach, beet greens, Swiss chard, Italian parsley ) are SUPER healthy foods. It worth eating them in reasonable amounts to get all of their wonderful nutritional benefits. I do still add caution for those that are prone to kidney stones or deficient in calcium.     Great recipes! Thank you for creating. Could you please create fat free and vinegar free dressings? Made of fruits, veggies, berries, juices and herbs? When I do medical medium cleanses, I can’t have any fats for some time and would love to make my salads more fun. I usually use orange juice with some garlic and herbs or lemon juice but that gets old quickly. Once, I made juice with mango and dill and that was pretty tasty, I think could make a great dressing. Thank you 🙏

      I respect Anthony's protocol, but I don't design my recipes around his guidelines. I eat fat everyday, and have read lots of studies that show positive effects of Apple Cider Vinegar. I have read Anthony's article regarding vinegars, and the context he speaks in is too narrow, in my opinion. I am sure that there are some people who may benefit from reducing Apple Cider vinegar intake, but the studies say that there are lots of benefits for the vast majority. Fat from nuts and seeds are VERY healthy if not over consumed and I encourage people I know to definitely include them in their diet. The dressings I make reflect the studies I have read and information I have learned from the most esteemed Nutrition Based Doctors, so I have no plans for making them fat or vinegar free.     I just came across your site, and I just changed my eating habits, I am in week 2 of nothing but plant based. No oil and refined sugar. I can I get some of your recipes. I would love to make my own dressing. I love salads, but by the time I finish with minds, it's not as healthy as it should be. Salad mix, fruit, raisen, flaxseed meal,.
    I don't onions, garlic, tomatoes, or lemons because of reflux.

    My husband and I are eating a large salad every day and I love what you are doing to make them even more nutritious. I want to begin growing and using microgreens. What kind would you suggest. My husband is fighting cancer with nutrition instead of the conventional radiation. Thanks for your willingness to share

      I definitely suggest growing cruciferous microgreens along with any other veggies that you like to eat in fully grown form. Of all foods that I am aware of, cruciferous vegetables are easily the most powerfully protective in regards to cancer. I also suggest researching mushrooms, because they have been associated with good results in preventing and in some cases even treating cancer (especially Turkey Tail mushrooms). One last thing, I suggest reading Dr. Fuhrman's latest book, Eat for Life, for a general approach to establishing good health.

    Great combinations !! I cut my greens up with scissors so I can eat my salads with a spoon. I saw that first at a little vegan lunch place on Fulton Street in Manhattan. A little more prep time but I find it easier to eat that way. Adding fresh figs makes that gormet !!

    Great salads and dressings. What can be replaced for the nuts in the dressings for those who have nut allergies? I am always looking for great dressing recipes to put in my rotation. Thanks

      Yes, great question. I have several nut-free dressings that I will be posting in the near future. However, if you want to make one in the meantime, I suggest using sunflower seeds and you could combine them with white beans also. This is my approach to making nut-free sauces. Please stay tuned for several over the next few months.

    I was scanning your vids for salads just this week due to watching a video of you with Chef AJ where you said you eat at 5am and 5pm with quinoa and something like 35 Ingredient filled salads and only eat your rich recipes on the weekends...
