Best Healthy Vegan Sausage Oil-free, Wheat-free

  • Veggie Sausage Ground:
    1 large head of cauliflower
    16 oz white mushrooms
    1 small yellow onion
    1 cup walnuts (optional to soak them for 2+hrs for a softer texture)
    3 tbsp tomato paste
    Seasoning:
    3 tbsp coconut aminos
    1 1/4 tsp garlic granules
    3 tbsp dried sage
    1 1/2 tsp dried thyme
    1/4 tsp ground nutmeg
    2 tbsp ground fennel
    1/2-3/4 tsp chili flakes
    1/2 tsp black pepper
    1 1/2 tsp salt or to your taste
    * for NUT FREE version omit walnuts and add another 8oz of white button mushrooms more coarsely chopped than the first portion to keep some texture, or use sunflower or pumpkin seeds.
    ** for MUSHROOM FREE use equivalent in jackfruit and process in to smaller pieces.
    Coarsely chop all vegetables in a food processor. Mushrooms can be made even coarser for a more meaty texture (This will need to be done in batches)
    Coarsely chop walnuts along with tomato paste until combined..
    Add vegetables and mushrooms and continue to cook on medium-high until water begins to release (approx. 5 minutes) Increase heat to high.
    Continue to mix until most of the water has cooked out add coconut aminos and seasoning. Continue to cook on high for another 5-10 minutes, or until all the water has evaporated and no water remains at the bottom of the pan.
    * Depending on your stove, you may need to adjust your temperature setting between medium and high to insure that all of the water evaporates.
    Turn off heat and add walnut and tomato paste mixture. Mix thoroughly to combine.
    Add to your dish of choice.
    Keeps well in the fridge for 3-5 days or in the freezer. I can’t tell you how long since mine never makes it more than a couple weeks without being used!
    Breakfast Sausage:
    2 cups Veggie Sausage Ground
    2 tbsp psyllium husk POWDER ( or 3 tbsp whole psyllium husks)
    2 tbsp arrowroot powder
    2 tbsp chickpea flour
    2 tsp dried sage
    1 tsp fennel
    1/2 tsp thyme
    1/2 tsp garlic granules
    salt to taste
    Combine all ingredients in a bowl and mix well. Form into patties. Bake at 350 F for 20 minutes. Enjoy!

      @@CharGC123 I watch Dr. Esselstyn’s daughter Jane’s you tube cooking channel. Jane and her mom Ann cook together. They designate some recipes as “plant strong” and other recipes as “plant perfect.” The plant perfect recipes are for those with heart disease and contain no nuts, and are low fat. The plant strong recipes are higher in fat and contain nuts. Not sure if the plant perfect recipes contain tofu. This seems to indicate that they do not think those with heart disease should eat nuts.

    Ok let me give you your props!!! I made these today. I substituted pecans for walnuts I added 1 jalapeño and 1 Tablespoon of maple syrup ( Cause that’s my business). Dude when I tell you it was off the chain!!! Thank you thank you for your spirit of excellence!!!

    I made this recipe this morning. I used riced cauliflower and had to substitute tapioca flour for the arrowroot because that’s what I had at home. These taste delicious and will go well with our banana pancakes for supper tonight. I’m an almost 70 year old plant based runner and will be well fueled for my race tomorrow. Thank you for sharing!

    (Abby typing) I prepped some extra of the raw ingredients individually and froze them. Cauliflower was on sale. Also I like to swap around ingredients and make different combos like you do. I used broccoli instead of cauliflower and subbed in cashews for walnuts and used mainly Italian spices. Still turned out great. This technique is a winner.

      MMMMM!!! I love vegetables, and cauliflower ranks as Number One, with broccoli a very, very tight second, so using brocc would be a wonderful changeup.

    👍🏽Excellent video. I am not vegan but love vegan cooking. I’ve been in an experimenting phase for several years. This recipe will make it much easier, to enjoy a group of foods I chose to leave behind but really enjoyed!!

    Hi Javant can't wait to make this, Our family has been vegan 10 + years now, and me as the chef at home, am always on the lookout for healthy, good food! I made 3 batches of the veggie ground and its been a win win in our home already lol! Back to the store I go today to make stock up on ingredients I'm short of. SOME TIPS I want to share with you and everyone is to VEGGIE PREP the day before, because after that you're simply tossing everything in the skillet, I tried PREPPING CUTTING AND FREEZING CAULIFLOWER IN CHUNKS , since it cooked down anyway. It worked out VERY WELL! I would keep mushrooms and add fresh (DO NOT FREEZE AND THAW) What are your thoughts Javant? Anyways thanks headed BACK TO THE GROCERY STORE YAAAAAAA!!!

      How do you make vegetables last long in the refrigerator they spoil to quick. I am new to trying to go plant based

      @@dominiquewyatt6704 get a gallon sized zip lock bag and put a wet paper towel in it and put your leafy green veggies. Like spinach, kale, parsley, cilantro, etc. Seal the bag and it will last a week or two. Sometimes I have to cut the veggies in half so they fit in the bag.

    Just got all the stuff and made the ground (saved 1/2) and patties. My kitchen smells so good right now from all the spices!! The patties are amazing. Can't wait to add the ground to a meal! I've been vegan for 22 years and don't get too excited about new recipes anymore, but this one is wonderful and has got me jazzed.     I love this recipe. Two days ago I decided to incorporate more vegan meals in our diet. The coolest part is that I wanted to look into cooking without oil for specific reasons. Your channel is the answer I needed. My son has many gut issues and is fiber sensitive. I am concerned about the use of ground psyllium. You mentioned a version where you used ground flax seed. I'd love to know more about that version. I'll probably try this recipe as well. Thank you so much!

    Thank you soooooooooooooooooooo much for sharing this video! I was wondering just yesterday about a more natural way of making sausage. I've been vegan for 4 years now and did a raw fast for 21 days about a month ago and I could REALLY tell a difference. Also having food allergies to soy, wheat, gluten, dairy, rye, and eggs, your videos have been very helpful.

    This looks fantastic! Thank you, Javant! I've been making vegan sausages with gluten and wrapping in aluminum foil which is wasteful. This looks healthier, tastier and easier! I don't love the flavor of psyllium but I bet it will be masked by all the wonderful herbs in your recipe. I'm also always looking for ways to get my protein up to 1.2g/kg bodyweight so maybe I will experiment adding some tempeh, lentils or gluten to some of your recipes. I wonder if you have played around with that. Thanks again for helping us get healthier and you're making the world a more peaceful, sustainable place! 🌻Marian Blum

    Crystal clear you are, my new found friend. I realize we will all want to customize to our liking, but you've done all the heavy lifting (obviously), and, PLEASE know how much you are appreciated. I'm curious if you are into fermentation? I find that adding a splash of brine and veggies to many of my creations takes them to the next level without screaming fermentation. You have found a path that suits you, and I salute you. We can all learn from each other, but when it comes down to it, we must choose what serves us best. With all my heart, have a glorious day.

    Hi Javari, I love that you've used all whole foods, and you didn't make this a science project like I've seen on RUclips in the past! I can get down with this because Dr. Esselstyn himself has spoken to me and he has put me on a WFPB program. I am to stay away from the Beyond meats and sausages. I must say that you are such a genius, and I will be making this!
