INGREDIENTS YOU'LL NEED:
BEST Banana Bread
recipe by shereen pavlides
{makes 1 loaf}
1 1/2 cups all-purpose flour (189 grams)
1 teaspoon baking soda
1/2 teaspoon kosher salt
3/4 cup unsalted butter - softened (173 grams)
1 cup packed light brown sugar
2 large eggs - room temperature
1 1/2 - 3 cups ripe mashed bananas (about 3 - 6 small)
1 teaspoon pure vanilla extract
NOTE: if using over 2 cups mashed, ripe bananas, you'll need to foil tent the bread and bake another 10 - 15 minutes. Can also reduce the heat of the oven to 325 degrees F. for the last 10 -15 minutes of baking, if needed.

I just used 3/4 cup lightly packed regular brown sugar.

I made this when I saw your TikTok video! Mine was a bit raw still towards the bottom so I’ll try again using this video and we’ll see how it goes!
Stephanie Marie please view my note in the description as well. When you add more than 2 cups mashed bananas, the hacks come in handy. I make this as a dump bread with wherever ripe bananas I have, so I figured how to rig it.
Letting it rest 1 hour to set is very important also.
Stephanie Marie wanted to point out in my TikTok, I used 3 cups mashed and 2 cups mashed in this video, to help you with visuals. I’d suggest for your second try, don’t exceed 2 cups.

Shereen- I don’t love plain bananas but WOW, I love this bread! I use a metal loaf pan for the bread but I notice you use glass... do you find glass superior?
Hi Julie, so happy you enjoyed it. I've never tried it in a metal pan but great to know, it works well. I use the glass because it's good for food photos, plus it bakes well.

Hi Shereen, I'm trying to avoid having to use sugar (or brown sugar in this case). Is there a substitute that you recommend? I've been experimenting with erythritol and xylitol... they both seem to be 1:1 as compared to regular sugar.

I loved this recipe. But don’t have a kitchen aid. So I did it by hand and my wrist hurts lol
Also another chefs tip i learned. Spray your loaf pan with nonstick spray, then line it with parchment paper leaving 2 - 3 inches of overhang on each side. This way, once it's done baking, you can lift it out woth the parchment handle you made.
I made this as a gift for my grandfather who LOVES banana bread and he ate the whole thing by himself withing two days hahaha
