Ingredients:
2 pounds pork belly, skin-on
Salt
White pepper
Bean sauce
Bicarbonate soda
Chinese five-spice powder
Instructions:
Prepare the Pork Belly:
Obtain a well-sized pork belly and clean it thoroughly. Pat it dry or use a paper towel to remove excess moisture.
Marinate the Pork:
On the meat side, combine 2 tsp salt, 2 tsp Chinese five-spice powder, a sprinkle of white pepper, and 2 tsp of bean sauce in a bowl. Mix, adding enough warm water to create a paste. Rub this mixture onto the meat side of the pork belly.
Flip the pork belly to the skin side. Apply 2 tsp of bicarbonate soda, adding a few tsp of water, and rub into the skin. Follow with 2 tsp of salt, rubbing it into the skin. Leave the marinated pork uncovered on a tray in the fridge overnight.
The Next Day:
Boil water in a wok and blanch each side of the pork belly for about 5 minutes to eliminate impurities and neutralize spices before air frying.
Preheat the Air Fryer:
Preheat your air fryer to 360°F (180°C).
Prepare for Air Frying:
Use a cleaver to scrape the pork belly skin and poke many holes in the skin before air frying.
Air Fry the Pork:
Place the pork in the air fryer basket, skin side down. Cook at 360°F (180°C) for 20 minutes. Remove, poke the pork belly skin again, and place it back in the air fryer, skin side up. Cook at 400°F (200°C) for an additional 25 minutes.
Rest and Slice:
Allow the pork to rest for 10-15 minutes before slicing to retain juices. Slice the crispy pork belly into bite-sized pieces.
Serve and Enjoy:

Wow different to so many techniques I've seen on RUclips which seem to emphasise getting the pork belly skin as dry as possible before cooking with in air fryer or oven. Boiling it in the Wok just before cooking it is so contrarian but those results your mum get look terrific!!

Should have shown what you did between boiling the meat and putting it in the air fryer. I assume you drip-dried and pat-dried it with paper towels? Need to show all that in the video.

I would love to try but afraid of the intense smoking this would cause in my (smallest, not xxl) Philips air fryer due to the high fat. Although, I know putting a few tablespoons of water at the base helps counter the smoking.

Can you clarify is that 180*F or 180* C when cooking the meat ? Because some countries doesn’t use metric systems… we don’t know and confused!
180 C
That would be be Fahrenheit for pork. 165°F for chicken.

What made it authentic chinese is the fact that it was cooked by chinese mother / son tandem, and, the rub is made up of chinese made ingredients. All the other steps/method/style are basically global. Congratulations. More power. I've tried almost all methods done globally, except the rub.

10:49 without cooking, 2 tsp baking soda, and abt 3T water, rub over skin, 12:52 then add 2 tsp salt and rub again, put to fridge over night with skin up.
Part 2, 14:22 put the pork in cold water to blench for 10 min. after having it marinated overnight (so to wash away the salt and baking soda), poke holes on skin, then airfry at 180 c for 20 min.,
Take it out, poke skin again and brush on some oil, airfry with skin up, at 200C for 25 min to burst skin.

It's long because he was talking a lot, you can eliminate the pricking steps for a different but still crunchy and perfectly good pork skin but there is no easy way to make good pork belly.

The point of air fryers is that they are for lazy cooks who can’t be bothered with all that effort.
I just salt the skin and meat a bit and leave it uncovered in the fridge for a day or two to dry out the sit it in the fan forced oven for an hour at 130 to 150 c then crank it up to 200 for ten or fifteen minutes to crisp up.
You get a slightly better result if you put some water in the pan and cover it with foil for the first cook then remove the foil and butter the skin but that’s extra work.

you're cooking 4 lbs, but the recipe says 2 lbs but still the same amount of other ingredients and cook time, does this matter or is it the same for 2 or 4 lbs?
As long as the pork belly is covered with the ingredients to marinade, in the end we still need to boil it before air frying
