Finally! I've been searching for a good, real-tasting naan recipe for ages - one the doesn't look or taste like it came from Kansas or Tennessee instead of South Asia. This is exactly it! The directions are perfectly clear, the ingredients easily available - and the particular tips and tricks and insights are absolutely invaluable to understanding how properly to make this wonderfully simple flat bread. The use of curd/yoghurt instead of yeast is THE trick here; the scorching of the exposed, unturned surface absolutely the best way to duplicate the way bread cooks in the tandoori. Alpa is a knowledgable, informative, perfectly delightful teacher; her steps are perfectly clear. Thank you!

Are you sure it really rise as no yeast, how can it rise in double ? I have not try as wondering is the recipe correct as I just made a banana cake that was hard, only 1/4 teasp baking soda given. I feel weird and added in 1/4 teasp of baking powder, the banana cake didn't taste or look nice, recipe from some other chef.
I did make some buns with baking powder and baking soda, but the didn't rise, rise only when we bake it. So I am wondering will it rise. Thank you.

I knew curd/yogurt was basically the same thing. Apparently they’re fermented differently, not that it would make the slightest difference when cooking. And we had Chicken Tikka Masala and rice. It was pretty good but I'm going to change a few things next time. Maybe you have a recipe to share one day. :)
