    things I noticed:
    1. that steak is cooked rare, not medium rare as you can see it is kind of purple
    2. it turned into a ribeye steak when you take it out of the pan
    3. when slicing, it is the original steak you showed to cook
    4. don't use olive oil, use an oil with a higher smoke point
    5. season your steak with salt at the same time you were adding the black pepper, don't add the salt after as it won't help
    6. use a cast iron pan or a pan that is flat as those ridges are just burn marks since the steak doesn't have full contact with the pan
    7. add some oil and then butter to the pan, then add garlic and rosemary to the pan and baste the steak in the mixture as it is cooking
    But at the end, you didn't even taste the steak? You tasted the side dish that you described how to make, instead of showing us how to make it?

      What are talking about? The steak IS the same. The pan he's using IS a version of cast iron... it looks different because of the lid he used. Its so good you thought it was a ribeye lol

      @@alexanderwindh4830 It's not the same steak. The one that was cooked is different from the one that was cut. And the one that was plated is again different as the cut stake was rare and the plated steak is medium rare.

      Using olive is bad, the smoke point is too low. Making the oil become acidic.

    This is quite dreadful no salt on cooking. I personally don't use griddle pans because its better to have a flat surface that is a bit thicker. It will cause a general sear all over the steak. Slapping meat with herbs it is better to add some butter and then put the herbs along with it

    For anyone in US or Canada, that is a Striploin steak. If you ask for sirloin here it'll be from the hind amd considerably chewier

    Incorrect, Jamie. As many others have pointed out, putting pepper into a hot pan will burn it. It is better to salt the meat prior to cooking and add pepper after cooking. A delicate sprinkle of garlic powder prior to cooking can also work. (Just go light and rub it in along with salt into the meat before cooking.) Also - Grill pans are a bad idea... when cooking a steak, one is taking advantage of the Maillard reaction, by reducing the surface area of meat in contact with cooking surface, one reduces the Maillard reaction, thus reducing the flavour.
    The cross-hatch marks on the steak look nice, but represent a missed opportunity for a better steak, cooked in a flat pan.

      I use it all the time. I’m a meathead. It contributes to the crust, texture and flavor. I use much less than what Jamie used though.

      It usually burns it but it doesn't ruin the taste at all, imo. I actually prefer it because the bitterness seems to enhance the flavor of the meat itself which is why it's so common to season it beforehand I assume.
      It's definitely a preference thing just like every other dish so it's a matter of trying it yourself and seeing what you like.

      There's absolutely no reason to use pepper on a steak at all, it does nothing good for the taste. If you put pepper on before you cook the steak, it will just burn because of the high heat from the pan. If you put pepper on after the steak is cooked, the raw pepper takes away from the taste of the steak itself. Just season it with plenty of salt before you cook it, that's all you need. Also, there's no reason to use olive oil, you want the steak to be dry on the surface before you cook it, so it crisps up better.

      with pepper it pretty much just depends on your taste. If you like the taste of fresh pepper then put it on afterwards. If you like that charred pepper taste put it on before (Heston Blumenthal likes it that way for example). If you don't like pepper just don't put pepper on. With salt it's best to put it on right before it goes in the pan cause that way it cooks into the meat better. People are always scared that it will draw out moisture but that will only happen when you salt it in advance and then let it sit, but if you put it on right before it goes in the pan it won't do much

      Zee @zee ...yes it is just you because he never mentioned one word about his cookware line. You make it sound like he’s using LeCreuset or copper which are expensive; his are not expensive. And a ‘coquette’ is a style of pan. I don’t understand why some people watch his videos when you have so many negative comments and pick at every little thing he says or does!! He’s one of the most popular chefs, is extremely successful and I think he knows what he’s doing. If you can be better invest in a cooking channel, cookbooks, restaurants and a television series

As for his cookware not being expensive then that's a matter of perspective and I never even said anything about the cost. It's not a case of being negative about him. It's called having an opinion. It's what we mere mortals call freethought. Since when was expressing an opinion a sin? I suppose constructive criticism results in the death penalty now..... I like his recipes just fine.     I season a steak with olive oil, white vinegar, salt and some rosemary. Rest for a couple of hours at least outside of the fridge.
    That's it. Try it and then tell me you don't like it. 👋🏼

    Also....If anyone is actually here to learn how to cook a steak, literally do nothing that this man says. Oil in the pan, Heavily season your steak with Salt and Pepper, use a flat cast iron, use lots of butter and other seasonings to baste it after a good sear.

      the sear helps keep the juice stuck inside the meat so that it doesn't run out and starts boiling which would hinder the perfect grilling.

    Is this method better than Heston's method? That is flipping the steak every 30 sec.
    And why not add the salt in the beginning? Every other chef I've seen so far tell us to season with salt right at the beginning in fact some say to season it only with salt leave the pepper for last after the steak is cooked because the putting the pepper at the beginning might cause it to burn due to the high heat in the pan.

      Heston's method is better. This method is trash. It also contradicts Jamie's previous steak cooking videos on YT.
