  • How to make moinmoin Nigerian Recipe
    Moin Moin is a Nigerian Beans pudding cake. Though it takes a reasonable amount of time to prepare but the end result is worth the time.
    Here are the list of ingredients
    11/2 Cups of dry beans (Black eyed Peas)
    1 Red Bell pepper/Tatashe (Medium size)
    1 Habanero/scotch Bonnet/Rodo
    3/4 Cup Diced onion
    2 Tablespoons Crayfish
    1/4 Cup Vegetable Oil
    2 Bullion Cubes
    3/4 Cup of cooked minced Fish
    3 Hard boiled Eggs
    Salt to taste

    Hey Chef, I screwed up. I thought I could use any old beans to do this recipe and tried with Kidney beans. Didn't work. AND, instead of stove top steaming, I put them inside a big roaster in the oven. So here are my questions: Do I HAVE to use black eyed peas? And does the oven steaming method NOT work? What did I do wrong?

    I want to know how many hours it can survive not being in the fridge cos am travelling with it on a 6 hours on the road trip and am making a lot.

      +Patrick Juliet Moi moi can actualy last a little long outside the fridge as long as the temperature is not too hot( Moi moi will go bad very fast in hot temperature). I have cooked Moi moi 9am in the morning before and it was still very o.k by 3pm when I got back home. If you will be taking it on a trip just make you expose it to fresh air and don't put it in a food warmer. (don't remove it from it's wrap or container you used in cooking it) and it will last.

    Hi Lola i love to eat moi moi and I'm trying to cook it by my worn ,but my question is-why we need to peel the beans if it is just fibre ,do u think if I not peeled the beans the moi moi not be nice? It's hard to peel the beans.even with the help of the blender .thank u

      You can use the African honey beans or red lentils. They both work as well.

      You can get Faberware 4 speed digital blender (the package has picture of pink smoothie in a jar) is great in grinding and cheap.

      +Denise White Hmm....good thinking, I have actually never had the thought of making it in a slow cooker so I really don't know how that's going to come out. However, if you need an alternative to stove top cooking you can actually put some water on the lower rack of an oven tray and steam the Moi moi in the oven at 400°F/200°c for 35 to 45 minutes or till it's firm. I hope that helps?

      It's just vegetable Oil. You don't have to spray but you do need to grease the pan to prevent the Moin moin from sticking to the pan.
