I have stopped peeling the beans. My family likes the taste better when the beans are blended without being peeled. I also cook it in my pressure cooker on the steam setting. No more having to worry about the water boiling out.
The moin moin looks tasty. The habenero would really give it some zing. Thank you for sharing the recipe and cooking techniques, like sealing the pot with foil. I like foods from different countries and now I’ll be exploring Nigerian cuisine.
For folks who've never had it, the closest thing to it (that I know of) is tamales. Not the same, of course, but the first time I had moi(n) moi(n), all I could think of was how much it tasted like tamales.
