  • My 20 minute Moi Moi recipe is the perfect breakfast recipe you need for the weekend. Fuss free and saves time.

    Ingredients
    1 1/2 Cup Beown Beans
    3 Small Tatase (Papeika Peppers?
    2 Small Ata Rodo (Habanero)
    1 Med Onion
    1/4 Cup Canola Oil
    4 Large Eggs
    100g Corned Beef
    1 Tsp Crayfish
    1/2 Tsp Stock Powder
    1/4 Tsp Salt

    I like the way you add the un-cooked egg alongside the corned beef and then topped up with the mix, layered. It's a nice modern approach. I'm in the process of doing it now.....You're good B. xx

    Hi, Bukie I made moimoi yesterday using ur recipe, I must say it was so yummy!!!!! I made a little change I wanna share with you instead of corned beef which I also love as well I used minced meat, It was fresh beef which I minced with my food processor then seasoned it with knorr and added it like you added the corned beef, pls do try it out dear.I love ur kitchen, outfit and of course YOU!!!!

    I'm not a fan of boiled eggs but I love lots of crayfish. When it comes to moimoi I actually love it plain. Just crayfish but the corn beef is eye catchy so I will be trying it

    This looks really good.Appreciate you creating such an easy to follow tutorial. May I ask what blender it is you used? Most blenders i get don't puree to the 'traditional' moimoi consistency.

      You’re welcome. It’s the Xtreme commercial blender, I got it from an IG vendor called @maxwellonlinestores

    Will be trying this soon. You don't cover the individual ramekins. Doesn't the steam condense and drip back forming liquid on top of each moimoi?

    Prefer moi moi with just crayfish and maybe some mackerel. Don't like putting eggs because I make large quantities and when you freeze it and take it out from the freezer the eggs make it taste somehow. Better for me to just boil my egg separately and eat it with my moi moi.

    Did you soak the beans after washing? Asking because my blender is not so strong.

      No I didn’t. I usually peel and freeze my beans so it’s almost always soft when it thaws

      I usually soak mine for an hour or so and it softens the beans before blending.
