Lovely! I’m not a fan of garlic though and in my part of Nigeria, it is not traditionally used. Leaf method is my favourite as the leaves add to the flavor and give it that traditional feel. I have cooked moi moi in the oven since I saw it done this way in my Nigerian uni back in the day. They used some kind of oven and poured the batter into oven trays. Then, they cut lines horizontally and vertically, forming rectangles and served it that way. I like the oven method but don’t enjoy cleaning the oven afterwards! So, steaming in a pot is my favourite.
the bigest mistake you will make when making moimoi is adding too many spices other than the peppers, onions and a cube and fish....curry, ginger,garlic and all these other extra will kill the moimoi...
I've tried making moin moin with red lentils to avoid peeling soaked beans...not bad but not the same as with beans. When I steam, it gets a bit messy with some of the batter getting into the water. So I'll give your oven method a go. I've done it similar to your method, but didn't place the dish in a water bath. The result was the moin moin was not moist enough. Thank you!
