〈CHOCOLATE MILK BREAD LOAF〉
✎ Ingredients:
Bread flour 300g
Cocoa powder 20g
Sugar 35g
Instant dry yeast 6g
Water for yeast 6-7g
Unsalted butter 30g
Dark chocolate chips 55g
Salt 4g
Egg 28g
Milk 205-210g
Almond slices
✎ Suggested fermentation time:
Autolyse 1 hour
First fermentation 1 hour
Final fermentation 1 hour
✎ Baking information:
Bake at 185°C for 30 mins
✎ Mould:
450g bread mould
◍ Notes:
The amount of water needs to be adjusted according to water absorption of flour, weather and humidity of the day
In hot weather, use lukewarm / cold water or cold milk or eggs; please use warm liquids in cold weather
Fermentation periods are for reference only,please adjust according to humidity and temperature on your baking day
The baking temperature and time are for reference only, please adjust according to the specifications of the oven

謝謝分享,請問如果一次做2-3個 可以晚上做放到冰箱第二天再做發酵嗎?請問第二問題是如果用機器攪拌是拌勻就可以了?
1. 如果晚上發酵建議第一次發酵時放入冰箱(12小時),第二天取回操作後再最後發酵按情況1-1.5小時(至9成滿)。2. 你意思時指基礎麵團嗎?麵團都應該是用機器攪拌到有薄膜,應該大概15至20分鐘。
