Natasha, I am so glad you tried it out. You can add Nutella/choc chips/ chocolate ganache just before rolling up together. After both pieces of dough are rolled, one on top of the other, spread the filling over the chocolate dough, except for the ending part where you make the 10 strips. I have tried it with a few tablespoons of chocolate ganache and loved it.

Normally, you can use a bit of oil as an substitute for the egg in the dough. As for the eggwash on top, maybe use a little bit of melted margarine. But please correct me, if I‘m wrong 😅
I haven't made it without eggs so I can not really tell what a good substitute would be. You can try to leave the eggs out or add some Greek yogurt instead.
Try to use all-purpose flour, don't bake with a fan (I never bake desserts with fan), use top and bottom heating, and cover with aluminum foil after the first 15 minutes of baking.

Top came out too hard, inside soft 😢
I used white bread flour
All-purpose flour might be a better option for this bread. Also, you can cover the bread with aluminum foil while baking if the top browns too fast.
