    I just made this and it's wonderful. Heat level was great for a Thai chili lover like myself. I have spent over half a day on some chili oil recipes and ended up throwing them out, usually because it's overloaded with garlic. I followed the recipe exactly, well, I halved the amount of dried garlic and onion/shallot and held them back to see if I needed the other half. I didn't. I thought it was a little too salty, so I would hold off on the salt and taste it after, if you think you need it.
    P,S. I used Chosen brand, Avocado Oil. Truly a break through for someone that's used ALL the other oil selections.

    I can't WAIT to make this. You definitely gained a new subscriber. Love your recipes. What can you use to replace sugar and keep it tasty still? What kind of oil do you use?

      Thanks so much! You'll need something sweet to balance off the saltiness and spice. You may use other sweetener you like or skip it if you can't have sugar. I used avocado oil, but olive works great too.

    Do you think you could add chopped lemongrass to this and it would work? I like the flavour of lemongrass in the Vietnamese chili oils, but I'm not sure if it would work without cooking it in the pan. I think it should if the oil is hot enough though.

      Hey Raam, soy sauce has a great umami taste. If you can't have soy, you can use coconut amino or yes, you can use salt. :)

      Hello Kareen, It's good up to months so long the oil covers the sediment and you use a clean spoon to scoop them each time. I still have mine since early Jan. Or you can refrigerate for longer shelf life.

      In the Arabic culture, we do all of us in olive oil, and the olives will never go bad even after 10 years anything that is preserved in Olive oil will last you at least a year

    Woonheng Can u please explain to me people's obsession w/ shallots? I don’t get it.
    I never have them in my house & I have to go out of my way to get them. Is there an acceptable substitution?

      Shallots are used mainly in French cooking and Chinese, as well as many other cooking styles. They are tiny small red onions with a delicate aroma that's less pungent than your typical onion. They also have a slight garlic flavor to them, although I've never picked up on that.
      Basically shallots work with so many recipes without overpowering the dish. They are considering fancy because in french cooking they use them as onions in fine cooking. You can get them in any well stocked grocery store. I've never had any problem finding them on the west coast. Usually they cost $4.00 lbs or more. The idea here is, shallots are used to impart a subtle onion flavor, which makes it nice and easier to control the amount of flavor in the food you are cooking. Hope that helps.

      The oil temp shouldn't be over 380F, I used around 360

    why do you have to cool it before you put it in the jar? why can’t you just add the ingredients and then the oil directly to the jar?

      depends where you live i mean the weather and always use a fresh clean dry spoon. it can last a year or more
