Just made this yesterday! One thing I should have done was cut a slit in the cardamom pods before I put them in the oil!!! Even though it simmered in the oil for only a few mins, it expanded and popped spattering hot oil all over the kitchen. I wouldn't want anyone else to have to deal with that, so take your time and cut a small slit in the pods to let any built up stream escape. The oil is so flavorful and went so well with some noodles and spring onions!

I made this today!! I added LOTS of minced garlic, and omitted the cardamom and bay leaf. I could only find chili flakes so I powdered half of them in my Vitamix. Toasted my whole spices and simmered in oil for about 10 minutes until the garlic was browned. I will never buy chili oil ever again!! 🌶️❤️

I love hot Chile oil. Made this and was so excited about it. I screwed it up because I added pink Himalayan salt. I overpowered it. Also, I now live in NC in the US and there isn’t many Asian grocery stores here. When I lived in New England there were Asian groceries everywhere. I also couldn’t find star anise so I used fennel seed. I will definitely try it again once I gather all the ingredients. We’ve become hunters and gatherers once again during this pandemic🤨
See if there is a Food Lion they carry most of the ingredients in the Spanish/Mexican food Isles. From dried chillies to star anise they have it. I find a lot of spices I need in spanish/Mexican grocery stores.
Thanks for this recipe! I made this today and it’s definitely fragrant and flavourful and, most importantly, has got a real spicy kick! The Szechuan peppercorns give you a real numbing sensation too, so can add more or less depending on your preference (I probably went a little over on that 😅). I took Marion’s suggestion and blended chilli powder with seeded chilli flakes. Lots of store-bought chilli oil have msg in it which is not ideal as it makes me real thirsty after, so I’m happy to have a home-made one that’s msg-free!
I made it!!! I altered it a bit by doing half green half black cardamom pods, some other dried chili powder in addition to thai chili powder and its SOOOO GOOD!!!

LuluFoxxx you can omit the cardamom IMH. Still turns out great. I use star anise, sesame seeds, sechuan peppercorns and garlic (which I take out when golden, and let the rest simmer longer).
I have made a huge jar of this and it’s such a delicious staple in my cupboard. I use it for flavoring my Asian cooking and a side to amp up my curries. So so tasty. I’m making another jar now! The first one lasted us for 3 months. Thanks for this recipe Marion :)
Just made this tonight....using hazelnut oil. This oil has been sitting in my fridge for 2+ years - couldn't bring myself throw it out. This recipe gave me a reason to use it all up finally.

Best chilli oil recipe. Made this the other day, but doubled the quantity. Turned out amazing. It’s definitely got a kick to it with the chilli & peppercorns, and the other spices give it a sweet fragrance. Plus, it’s so much cheaper and tastes better than buying the store-bought stuff.

This is my go-to chili oil recipe. I sometimes crisp up some garlic and shallots and add it to the oil. Really delicious. I haven’t found anything that I can’t put this on but my favorites are eggs, pizza, plain rice, any veggie and just plain out of the jar by the spoonful. Really, it’s great on anything.

Thank you, thank you for giving the tip of using the schezuan pepper. I had a hard time finding it but eventually did and now I am addicted to my version of the oil. I do not add the kardemom but I do use part sesame oil. I am addicted to dumplings with this oil and plenty fo green herbs and pickled mild chilis now.
Made my first batch ...so happy with the result....if I want to make a bigger quantity do I have to double the ingredients that get infused in the frying pan?

I made it!!!! I'll give it a few days for the cinnamon and star of anise to infuse more. You definitely need two tablespoonfuls of salt. Lol I was nervous about that. It actually could use more! I did not have the large grain sea salt but 2 TB worked fine ground. Giving as a gift to a friend that likes super hot food. Ps made for myself too. Lol

@@aisyahjanna1767 You could, but you would end up with a different product. A neutral vegetable oil will stay liquid at room temperature and won't interfere with the chili oil flavor, which isn't just about the heat but also the aromatics.

I made this with some chillies from my chilli bush that I dried out in the oven and blended to make my own chilli flakes. Using it on everything !

I don’t know which part of NC you live in, but I do know that there’s a huge Asian market in Greensboro called Super G.
In Australia we have all of these ingredients in a standard supermarket. Don’t have to hunt around.
U can find star anise in an Indian grocery store ....if u have one nearby.

I made a very similar recipe but added toasted sesame seeds and a bit of chinese black vinegar. Soooooo delicious!
This sauce is absolutely gorgeous and makes everything around it taste better, even water!

Thank you, thank you for giving the tip of using the schezuan pepper. I had a hard time finding it but eventually did and now I am addicted to my version of the oil. I do not add the kardemom but I do use part sesame oil. I am addicted to dumplings with this oil and plenty fo green herbs and pickled mild chilis now.

I made it!!!! I'll give it a few days for the cinnamon and star of anise to infuse more. You definitely need two tablespoonfuls of salt. Lol I was nervous about that. It actually could use more! I did not have the large grain sea salt but 2 TB worked fine ground. Giving as a gift to a friend that likes super hot food. Ps made for myself too. Lol
I've been making my own chili oil for about a year now and it's addictive! Your inclusion of cardamom is brilliant, I'll definitely be adding that to my next batch.
Can i use coconut oil for chili oil?
@@aisyahjanna1767 You could, but you would end up with a different product. A neutral vegetable oil will stay liquid at room temperature and won't interfere with the chili oil flavor, which isn't just about the heat but also the aromatics.
great recipe, just a suggestion, put the music levels down significantly as they are distracting. Otherwise great stuff!

In the fridge it would freeze the oil.
probably in a dry room temp would work fine, and I would say you can keep it for up to 1-1.5 months
