If you are making small quantity, you can add salt to the mixture and keep. If making large quantity, use salt for only the portion you are making next day

Would it make sense to add fenugreek seeds into urad water as this water is conserved, to add into grinding batter, while rice water is discarded ?

Hi mahima..am a idli lover. Was not satisfied with my recipes of idli especially the ratio of rice and dal..after folllowing urs my idli s perfect..one suggestion s dat if u r using grinder u can reduce the quantity of cooked rice..otrewse found lil sticky idli..
Raw rice : 2 cups
Urad dal : 1/2 cup
Cooked rice : 1/ 2 cup

This is a very small portion. Use mixie jar for this. If using grinder reduce quantity of cooked rice

is there a consistency of idli batter which one could call perfect ? would it be ok to add water into the batter the next morning if I feel that the batter is too thick ? am confused about the consistency,as too much or too little water could impact the texture of idlis.please clarify.
Batter for idli should be thick. Follow the recipe and you will get best results

I tried fermenting for 10 hours. Didn’t work. Followed the recipe. What could be the reason?

@@MahimasCookingClass Kochi itself. Actually an update- after about 14 hours, it fermented well. It’s humid here, still don’t know why it takes time.

What is the benefit of adding salt before keeping for-fermentation
Helps in fermenting. Also you don’t have mix in the morning while adding salt and deflate the batter

Can the salt be added in the whole batter before fermentation or just to the portion required for making idli after fermentation?
Add salt to the batter if you are making idlis with the full batter. Or else use salt to the required batter
