  • Tequila is the national spirit of Mexico, and is one of the most consumed spirits in the U.S.A. so much so that there is a national tequila day! In this Video I go over what is Tequila, How Tequila is Made, The Brief History of Tequila, my recommendation for the Best Tequilas, and finally the problems currently facing the tequila industry.
    I go over what is Blanco tequila, what is Reposado Tequila, and what is Añejo Tequila. Essentially going over the difference types of tequila. I go over what is a good tequila. Overall, this video talks about everything you need to know about Tequila Explained!
    Tequila is a Spirit made from the Agave plant, and can only be made in Mexico. More specifically in the state of Jalisco. It is an Agave spirit, similar to Mezcal and in fact Tequila is a Mezcal.

    The best recommendations to make to novices or enthusiasts about Tequila purchasing besides what you did in recommending getting 100% Puro de Agave Tequila, is looking for additive free 100% Tequila and also buying 100% Tequila that is made in a traditional and artisan fashion.
    To explain, for example, Partida and Lunazul Tequilas (and countless others!!) are made in a Modern/Industrialized manner; that means:
    they used an Autoclave to pressure cook the agave, they extracted with a mechanized Roller Mill, they fermented in Stainless Steel tanks without fibers (less flavor!), and they distilled in Stainless Steel stills. There's nothing traditional there for Tequila (and the faster processes allows for over harvesting, as you mentioned, one of the issues in the Tequila market) - right?
    Then, you take other brands like El Tesoro Tequila (and Fortaleza, great shout out btw) - that Cook the cores in Brick Ovens, they extract by the Tahona stone mill, they ferment in open wooden vats with fibers (more flavor, yey!), then they distill in classic Copper Pot stills - this is the traditional and artisan way to make Tequila.
    Craftmanship adds value, and yet it is priceless. Support artisan producers.
    In extreme, things that are mass produced like Jimador Tequila (Jose Cuervo, here's your headache Lui) - they're cooking the agave with Acid-Thermal Hydrolysis, using a Diffuser for extraction, fermenting in Stainless tanks, and distilled in a Colum still. I'm gonna be nice and just say, thanks but no thanks.
    I mean, we can cook a Turkey in the microwave, but do we want to?
    I'd rather roast my turkey in the oven!!!
    But it's your money, it's your turkey, y'all do what you gotta do that makes you happy, right?!
    But also, please stop spreading misinformation: The Tequila D.O. extends production to 5 states in Mexico, not only Jalisco!

    One tequila I recently learned about is El Tequileño Reposado Rare, which is a Reposado which is aged for about 6 years in a Pipón instead of a barrel. That’s right a 6-year Reposado. I learned that a Pipón is a large oak tank which hold up to 6,000 gallons of tequila instead of approximately 55 gallons for an ex-bourbon barrel. So because it’s such a large container there is less surface area inside for the tequila to make contact with so therefore it takes much longer for it to reach the same amount of oak aging as a typical Reposado. Most of that subcategory is dictated by Mexican liquor laws.
    When I first learned about it I thought “wait a minute, 6 years. That’s an Extra Añejo time frame” it blew me away. Someday I’ll try Reposado Rare.

    Hi Lui, thanks for educating us on these styles. I've looked at my unopened bottle of Jose Cuervo and it has NOM1122 on the back.
    Earlier this evening I made a 1910 cocktail from Steve's App recipe. It was a beautifully rich cocktail, as rich in flavour as A Right Hand Twist!
    I always look out for your shows.

    Awesome video Lui. I personally really enjoy these information videos. Ford Quarterman did a good tequila tour video also, so I really enjoyed the insight you provided. And I agree with Tim, length was fine for me. 🤷🏻‍♂️

    Would you consider reviewing American agave spirits and commenting on the effect they might have on the industry? (As in Tequila is to "agave spirits" as Champagne is to "sparkling white wine.")
    Hawaii, for example, is pretty much ideal for growing agave and a couple distilleries are getting into it. Are any of these any good? If American distilleries keep a high standard of quality and price point, does it help mitigate the problems of overharvesting Mexican agave while satisfying the surge in demand?

    You should try Tequila 7 leguas… and if you have the opportunity to visit Atotonilco el Alto Mexico… you are so welcome to visit the Factory.. we are the only distillery that still doing the tequila process with Tahona pulled by mules… could be an amazing experience ☺️🤠

    Super interesting info, learnt so much as always! Such a shame that the Jimadors are baring the brunt of the overharvesting issue, have heard some wild stories about the competition that is causing plots of land being 'booked out' for decades in advance. Do you think Mezcal with its more flexible choices of agave will soar as Tequila producers can't make as much of the 100& blue spirit?

      Yeah man! It's crazy.
      And yeah unfortunately i do think the Mezcal market may face similar issues. Maybe not as drastically as the tequila market because the Tequila market has a ton of Celebrity hype behind it that I don't think Mezcal will ever have.
      It's a shame too since it's such a labor intensive process to make these incredible spirits.

      Well, there's many sides to this story, unfortunately, Oaxaca has been affected by deforestation already, because the demand for Tequila/Mezcal has grown so much, that the industrialized Mezcal brands are duplicating the Tequila model and clearing lands to plant Maguey Espadin, which is really a twin brother of Blue Weber Maguey. They mature about the same rate, they have almost identical look, and they can interbreed, so essentially the same specie. So it's favorable for a high-demand market.
      On the other hand, you have the true ancestral and artisanal producers that abstain from planting agave en masse, and they continue to harvest agave from the wild. This is great, only if there is reforestation efforts attached to those harvesting wild agave. Some agave populations are fragile and do not do well in greenhouses.
      So certainly sustainability is a huge focus moving forward, there are brands that may be promoting planting one agave for everyone they take, but that may not be enough. We believe to meet future demands, they should be planting 3-5 agaves for everyone they take from the wild.
      If they do not, then the aside from running some species to extinction, in a wildlife eye, the other thing that will happen is the prices for Mezcal and other agave spirits will soar to unimaginable levels.
      I think Bourbon culture is "cute" when they're selling highly-sought after bottles of things that sell for $1000 or more, the likes of which may rhyme like Daddy Ban Wrinkles, for example, and it's nothing but corn water with wood ageing, which is replicated year after year.
      We cannot duplicate the unique characteristics of Agave plants that take 10 to 30 years to mature! And less so if we don't protect the wild habitat and species, so who knows, maybe in the future we'll see a bottle of Mezcal slowly clime to $400, then $1400 per bottle. And of course it's gonna be impossible to sell within Mexico, so they're gonna go for the export market for consumers that can afford the luxury and commodity of the world's most unique spirit.

      @@Lui_Fern Stressful times ahead for the agave spirit producers it seems. Very curious to see how it all shakes out. Was shocked the first time I heard Blue Agave is 6-10 years to ripen, such a forward thinking market. 'Agave Futures' and all that.
