- When I set out to learn about tequila, I asked professionals in the distilling industry who would be the right person to teach me all about the Different varieties of tequila?
➡️ The name Clayton from La Cata came up repeatedly. This was such an amazing experience, and this video is my reference and guide for tequila as Clayton explained everything perfectly for me to grasp and hopefully you will use it in the same manner as well.
➡️ FYI........Some additional information about the episode:
When I say “birthplace of the drink that bears its name” - the tradition is born in what is now Amatitán, although at the time (1620-1640) that town was part of the canton of Tequila.
➡️ Due to the Pandemic, I am sad to say that La Cata has closed its doors in Tequila, Mexico. Clayton continues to share his knowledge about Tequila and is currently writing a book about the amazing agave spirit.

My takeaway from this is if I drink the first half of the bottle one night, the responsible thing to do is drink the other half the next night? That’s some advice I can get behind
Hahahahaha that’s what I took away from it as well. Then I watched it again and was like oh I have other alternatives. Nah, I’ll stick to drinking the other half the next night with friends. Hahahahaha thanks for the comment brother, -Jeff
I did that. The next day I walked into my friend’s bathroom blitzed sideways and slipped on the tile and landed so hard against the back of the toilet that I split the tank right in half. Water everywhere. Funny tequila story…so I don’t drink the other half of the bottle the next day. Lol
It should be fine for a couple of days, but don't leave it more than a week.
Down the whole bottle in one night to avoid oxidation.

I love this! My mom was raised in Tequila, Jalisco and took my sister and I since we were children. I still remember the roads being made of stone and jumping on them on our way to the plaza. Just went in March and am super excited to go back next summer to see the family. It really is a magical town. 💕

You have scratched the surface of Mexico! Once you learn Tequila, explore Mezcal, the scotch of Mexico. I travel to Tijuana for business monthly, so much good food and drink to experience in that culture!

I'm 24 , never had taquila before, I was more vodka whiskey type of guy but I wanted to experience more so I came here to see and learn about taquila. You guys made it fun to watch and very professional and simple! Thank you 👍🏻
Lion Golani super cool. Yeah I use to think tequila was only gold and silver and you have sat and like with it. This is not the way to enjoy Tequila. If you like whiskey, what kind do you like? I'm a bourbon and Irish whiskey guy. But if you like smokey scotch (islay) you would really enjoy mezcal.
Took me time to appreciate it. Take it as a slow sipper to be appreciated and loved for the hard work and process that comes from the people and the soil

Fantastic overview, thank you! My only question/confusion is the recommendation to finish a low bottle in a short time span. I've had open tequilas for well over a year and they didn't seem to lose any complexity or strength.
Thank you for a splendid education on a subject that had hitherto evaded my awareness. I particularly liked the clear explanation of the different ages of the spirit. I am also impressed with you have been in the military and now exploring such an interesting subject.

I love the Blanco agave tequilas! I sip and do not do shots as I like to taste the requila, so no salt, but sometimes orange or lime. Excellent, educational video! Thank you!

So glad I bumped into your channel. I love tequila and want to learn about it. I have learned the hard way about beer, and wine, just buying different brands and tasting. A slow and expensive way, and sometimes not so good tasting products. Now I can cut down on time, cost, and narrow it down to get to the good stuff. I don't like oak barrel aged spirits, or wines. Now I can hunt for the Blanco brands first and hopefully find one I like. Thanks for the education and information on a very interesting form of alcohol.

A great video, with lots of awesome info for beginners. I would have really liked to have seen Clayton touch on production methods and which ones result in a better quality product- as well as benefit the industry and sustainability, in general- but I understand time constraints and not wanting to make it too deep. Perhaps you could focus on those in a future episode? Salud!

I think really going in depth on the entire production process, from harvesting to cooking to crushing to distillation- and discrediting brands that use industrial production methods (diffusers)- would go a long way in educating viewers and really helping them appreciate and respect the monumental amount of work and pride that goes into this incredible spirit.

Great video and great insights from Clayton. I have a new appreciation for Blanco. Before I would have considered it to be a lesser product because it’s not aged; I like that it’s “the true expression of the tequila and distiller”. As a whiskey and scotch drinker, the parallels are very interesting. In whiskey, the “white dog” is the un-aged product; one might sample some out of curiosity, but no one drinks white dog. We all wait 3-20 years for the whiskey to be perfected. Blanco comes from the still as a ready to drink product (as do gin, vodka). Also the appreciation for the agave plant, it takes many years to cultivate, unlike grain that is churned out by the ton every year. Much appreciated!
Couldn’t of said it better, I’m currently in Scotland now learning all about Scotch and was thinking about how palatable “New Make” spirit was compared to Blanco tequila. Wow! I consider myself a serious tequila enthusiast and Clayton did a superb job! (... albeit, I was saddened to read the update comment of the closing of his tequila bar due to the pandemic)
Yeah Clayton gave me a whole new respect for tequila. glad to feature him and unfortunately lost one of the best tequila bars around.
I wonder if he is planning on reopening, or maybe opening something new? It's hard to keep a good man down.

Thanks for the video. I needed to educate myself. All I knew was to get 100% Agave. I rode my motorcycle from Portland to Ushuaia Argentina in 2016 and ran out of gin near Mexico City. So I switched to tequila and have been drinking it ever since. State side I drink mostly 1800 Silver.

Very interesting (I have to admit I'm a complete newbie in that category of spirits & I just started a few years ago to discover agave through Mezcal which seems to me a fascinating spirit but I guess it could be interesting to do comparisons with those 2, Tequila & Mezcal. Your guest is knowledgeable & the tips given useful, I'll remember them when looking into the shelves now, Cheers from France ! (PS: Besides, your story & very original journey is really amazing, you should write a book/guide if not already made).
I learned so much from Clayton and I have a new respect for tequila after learning all about it and working in the fields and distilleries. What a process to make it.

Thanks for your proposal but I'm not travelling at the moment, or not too far (I had to do a 70 to 100 km this year to go work on the side for a French distillery as a consultant blender, yes blender is my thing even if I'm self taught, but supported by John Glaser' friendship over the years & i did exchange also with other famous master blenders, so you'll never know). Slainte ! And being a huge channel (yours) I do appreciate the fact you took the time to answer every single comment I made ! (not all do) 👍

Good info. After watching it I ran to my bar to look at what I purchased in Mexico. Some of the bottles don’t have the NOM numbers on them so they may be questionable. I did get a good buy on a bottle of Seleccion Suprema that I’ve been nursing for a while and it’s good to know about the 50% rule. Tequila party!

@@delantsotsan I’m a big fan of Volans, Fortaleza, Cascahuin and Arette. I can go on and on but really love traditional methods of tequila making and these distilleries are keeping it old school which I respect. Also not your main stream tequila writers will discuss these brands often but any tequila enthusiast will know them.
I'm 73 years old now and I've been drinking tequila since I was in my late twenties, and I've tried some of the most expensive brands out there, and I really liked all of them, but I'm retired and on Social Security and I can't afford to buy expensive tequila, so whenever I buy it I always buy Sauza clear (not the gold). It has a great taste and is very smooth, and it gives you a good buzz.
I have a pretty good idea that if you sat and drank some of the top shelf tequila with a 'tequila expert' and after four or five shots, without him looking, you switched his glass with a glass of Sauza, that he wouldn't know the difference. Just sayin'.
I can’t argue with you Jim, Sauza is amazing tequila. sounds like you definitely know your tequila and you know definitely should splurge on yourself from time to time on a tequila that you have good memories with. Cheers and thanks for taking time to comment. -Jeff
That was my grandfathers daily tequila. He drank it daily till he passed at 96
you know what's weird is i, too, did a tequila phase on different brands and finally settled on Sauza clear - that taste is so good!
@@serenityrahn5656 ~ Yeah, and it's reasonably priced. Personally I think it's the best tequila for the money.
I do like Sauza also, but it’s what I make my margaritas with. It’s not a sipping tequila for me. I can still splurge a little and my favorite right now is Milagro single barrel reposado. But that is also just my taste. I’m sure there are better that I haven’t tried yet. But to me, the tequila you should buy is the one that tastes good to you and you can afford. If I have a good month I get the single barrel reserve reposado.
