    The diakon storage tip makes me want a whole video on proper storage techniques. I'm constantly trying to find the best way to store different types of veggies.

      The best way to store root vegetables is in a pile of dirt actually. But since that's difficult 😄, use the same technique as Maangchi did with the daikon. Can be just a wet towel and a box too.
      Leaf vegetables can be stored in the fridge wrapped in paper towels and aluminum foil or a dry towel (as opposed to a wet one for root vegetables) and a plastic bag but they don't last long in general and lose vitamins quickly too. All vegetables do but they're the worst when it comes to that.
      Tomatoes, cucumbers and vegetables containing lots of water should never be stored in the fridge and onions, garlic, potatoes etc. should be stored in a dark, cool place (not the fridge). The cute stone / ceramic / etc. containers my grandma used seem to be popular again, they are perfect. Potato bags exist too but ceramic or stone keeps them cool too.

      My favorite way to store daikon... is to pickle and share with friends haha

      For leafy veggies like arugula or lettuce, wash it with water, rinse very well, put in a bowl with tea towel/cloth which you fold over the leafy greens. It will stay crunchy and fresh much longer. Bonus points if you place a plate over the bowl too.

      my mom (born 1950 south korea) made this every summer with tempura. I still eat it every summer with my family and friends in u.s.a. Thank you to for the meal my japanese brothers/sisters

    I was on my honeymoon in Japan with my half Japanese wife when I had Soba for the first time. At about 10:00 PM the noodle man came down the street pushing a cart, blowing a low whistle. My wife who grew up in Tokyo said it’s the noodle man! Let’s go. It was a wonderful experience eating cold noodles in the warm summer evening with the neighbors who all came outside wearing their pajamas.

    I've enjoyed cold soba sice i was a child. I'm American, but my grandmother immigrated to the United States from Hokkaido Japan in the mid 50's. This dish was always a staple in our home during the summer months. It's so delicious! I sometimes like to have a little Natto on the side with some crushed sesame seeds and julienned shiso leaves for added flavor and texture.

    It’s called zaru soba in japanese. I use the same brand of dipping sauce(gold cap) featured in the video. If you’re going to add the ground radish in the dip it is absolutely necessary to dilute it bec it will make your sauce tangier. I use mine straight up and store it in my fridge so I won’t have to add ice.

    its that time of year, where cold meals and iced barley tea are kinda absolutely my go to "i do not want to heat up my house, because its too hot" situation, and having another recipe in the repertoire is 100% something i absolutely needed beyond all belief, thank you so much Maangchi!!

      @@canaisyoung3601 it is, in fact, a whole thing, and its absolutely delicious. (it is not beer, and is incredibly hydrating and good for your skin lol)

      ​@@canaisyoung3601It's called bori-cha in Korean. You just boil dried roasted barley (Korean stores sell these dark kernels used specifically for tea) in water and drink it hot or chilled.

      @@canaisyoung3601 barley tea is a thing, if you have an Asian grocer you can probably find it in the teas isle. It’s lovely hot, but incredibly refreshing cold. A lot of Korean restaurants (at least here in the US) also often serve it instead of water :)

    I like to save the super starchy water when making buckwheat noodles, you can use it in place of milk in recipes! I usually use it to make crepes.

    OMG! I always wondered why the cold soba I make as an adult doesn't taste the same as what my grandpa made on hot days when i was a kid. It might be because he made it THIS way! I remembered a "cold soup", with noodles in same bowl as dipping broth (probably because we were clumsy kids) 😂When I've tried to make it (Japanese way), the broth was more salty and not "fluffy"...now I suspect the "secret ingredient" is ground radish!! I'm stopping off at my Korean grocery ASAP--I can't wait to try this version!

    Maangchi! I learned from you, long, long ago, how to roast a stack of gim in a pan, and also sheet by sheet over my gas stove! Ever since, I buy gim in 100 sheet bags and always have it on hand! I eat it almost every day and even my 6 yr old grandson has come to love it and asks me to toast him some every time he comes! Now I'll have to make Memil- Guksu for us too! What would I do without you! I know Ive shared with you before, but I am still fighting cancer and I truly believe that eating so much Korean peppers and gim and vegetables has helped reduce cancer reoccurances! I owe all of my Korean cooking knowledge to you, Maangchi! Thank you from the bottom of my heart! And now, if my dream to see Korea ever comes true, I will know what each dish I order is and how delicious it will be! ❤

    I literally just went out to get ingredients to try this, I'm very excited! I love buckwheat noodles, so I think this will be a refreshing new way to enjoy them. I also like buckwheat noodles in Maangchi's cold soy milk soup, also refreshing in the summer!

    🌼Maangchi🌻, you always lift my spirits up especially when I'm working at the hospital and sneak your video in😂 Believe it or not, we have some great chefs here and the food is amazing! No complaints on hospital food anymore!. I eat light during the hot summer months. Lots of salads, smoothies and grilled fish and veggies.     I love cold soba, udon, so-men and ramen especially in this season🥵💦🥢. I also love to cook noodle salad using these noodles when I get bored with soy sauce based soba soup🥗🧑‍🍳.

    Maangchi - why does the daikon get a little blanket?

      I wrap my daikon (or radish) with a cloth before placing it in a plastic bag and refrigerating it. The cloth prevents the daikon from getting too cold, which can cause a sponge-like texture change. The plastic bag helps retain moisture, keeping the daikon fresh and preventing it from drying out.

    Hi. i would try that one. i have ate like that in a Japanese restaurant they have like soba , wasabi, dipping sauce then with raw quail egg added to the sauce. it is so lite and tasty and refreshing. i really enjoyed eating it before now i would try recreating this one too. thank you Ms. Maangchi.💜
