    INGREDIENTS
    2 dried soba noodle bundles (each bundle is 90 to 100 grams or 3 to 3 1/2 ounces)
    3 tablespoons perilla oil
    2 to 2 1/2 tablespoons soy sauce
    1 teaspoon unseasoned rice vinegar
    1 teaspoon granulated sugar
    2 tablespoons toasted sesame seeds
    1 sheet roasted dried seaweed (Korean gim or Japanese nori), unseasoned
    Julienned cucumber (optional garnish)
    Shredded cooked chicken (optional garnish)

    Love simple cold noodle dishes like this! I love drizzling perilla oil over congee and never thought to also use it on noodles like this. Definitely going to make this soon!

    I loved your presentation! I’ve never had or used perilla oil and watching and stopping the video 4-5 times I was unable to figure out the brand of oil that you used. Would you be so kind as to put the name of it in a reply as well as what YOUR favorite brand or brands are. I’m looking forward to experimenting with this oil as well as duplicating your recipe. It looked absolutely delicious!! Thanks.

      Hana, thank you for the link. Unfortunately hmart was out of it, but I found it plus a cold pressed perilla oil that I purchased as well on Amazon. They’re both arriving in a couple of days, so I’ll make your recipe with each, and report my results back to you. Again, thanks for the link!

    Hello! Could you explain why some people add cold water when cooking the noodles, like you said your mom does? Thank youu!!

      Hi Eleni! My mom does this because she says it improves the texture/chew of the soba noodle, but I'm not entirely convinced I can taste a difference so I just do it the way I like to do it. 😆 4 minutes (no more, no less) with a nice drain/rinse in cold water afterwards - enjoy!
