I just made this for an early lunch because I just happened to have all the ingredients, including homemade kimchi. It took me about 20 minutes from start to finish to prepare this and the flavor is outstanding. I made a simple soup using anchovy/kelp stock, shredded spinach, green onion, toasted/crushed sesame seeds, and and a little seaweed. You're right Maangchi, the warm broth takes away the burn from the kimchi and gochjang. They really compliment each other very well. I'm so happy right now. :)
What I have learned from cooking dishes from many cultures is that the basic tastes (sour, sweet and so on) are best added to a dish not in the easy way (vinegar, sugar, salt ...), but rather by adding ingredience that also add other flavours while giving a specific taste. And because I often don't care about tradition when making new recipes, I can combine things that normally dont really go together. Like fish sauce, white wine and date paste. This way many interesting flavours can be created. Being open minded makes for good cooking. And thank you to Maangchi for the great inspiration!

I disagree, sometimes simple flavor like the kind that you get from white salt + vinegar + garlic + oil + chili flake is already amazing (recipe to try: baked eggplant with garlic in chinese style). My family's recipe for dipping sauce also simply using garlic+white vinegar+soy sauce+pinch of sugar, great for baked fish, boiled chicken, etc. There are many Asian food that use white / dark vinegar that would taste super weird if it's replaced with other ingredient like kimchi / sauerkraut/ pickle. So my point is, every ingredient is delicious, even if its just an ordinary white vinegar. With the right combination, the simplest ingredients can create wonderful flavor.

This is one of my favorite comfort foods. My mom would make this dish often when I was a kid and I always called it, 'Korean Spaghetti'. It wasn't until much later in life when I asked her for the recipe, and found out the actual name of the dish.
Definitely going to make this recipe tomorrow. My 5 years old niece said it's looks yummy. But i told her it's going to be spicy. She said she can tolerate it just like your teokkbeoki recipe. 🥰
