    Your talking my language with this soup. I’m originally from Texas and TexMex was a staple food. I’ve lived in Saskatoon for 36yrs now and make Mexican food regularly. This looks sooo delicious and I will definitely be making this in my Instant Pot! Once again, you and Dude are the BOMB!❤️

    Nice hot meal for these cold, rainy days, at least here in the Bay. We here in Northern CA are experiencing unusual weather, almost like Raincouver. I like to sprinkle a good dose of paprika and cayenne powder for that nice kick !

    I had some chicken tortilla soup at a more upscale restaurant awhile back, and loved it so much, I made a note to try and figure out how to make it. I have tried many of your recipes, Flo, and I’ve loved each one, so when this popped up to watch, it was the answer I have been looking for! 🤗 I will definitely be making this soup! Thank you!!!

    Oh, Flo & Dude; that soup looks so good. I love Chicken Tortilla Soup. I've never made it but I used to buy a boxed ready to assemble tortilla soup and it was delicious. I can't wait to buy the ingredients and make my own. I'm sure it will surpass the boxed soup. Thank you for making it, filming it and posting it.

    Chipotle peppers are ripened jalapenos until red that are then smoked and dried (Dude was right that they have that level of heat). Adobo peppers are these dried chipotles stewed in tomatoes, garlic, salt, spices. Loved this recipe. Tfs.

    Dude, you used the perfect comparison, "no hotter than a jalapeno." That is because a chipotle pepper is a smoked, fully ripe jalapeno.

    This looks great-I have made chicken tortilla soup many ways but not this way so I will be trying it! I do not like the taste of red chili peppers so I use green jalapenos most of the time. Several different ways to make it-use Rotel tomatoes if your store has them (they are canned and in the area where you get other canned tomatoes) they come in regular which is pretty hot and mild-they add a really good flavor to the soup and it makes it so easy-I throw together chicken like you cooked it and chicken broth and Rotel tomatoes and simmer for a few minutes-nice and quick! Sometimes I will add corn tortillas at the beginning of the simmer and they all fall apart and make a thick soup with a yummy corn like flavor. Thanks for another great recipe! I have tried many of your recipes and they all turn out great! I especially like the Asian ones! And cooking all these things in the Instant Pot is a game changer! Thanks again for all you do-what a great cook and instructor you are. :)

    Love the scraper. I have quite a few and some I bought at hardware stores, scrapers for painters and constructers which are very efficient and very cheap. Same goes for the brushes before the silicone ones. But I've never seen one with measurements. It is now missing in my collection 😊

    Those brown bits are known as "fond" The term , French for "base" or "foundation", refers to this sauce, although it is also sometimes used to describe the browned food bits instead (commonly in the United States). Burned pieces should not be confused with , which is dark brown.

    Looks good! The pastry scraper is cool - Rachael Ray calls it a "food mover" :-). I like using it at home so much I bought one for the trailer. I learned from RUclips that the brown bits are called "fond".

    I am thinking to make the chicken tortilla soup in advance, say 2 to 3 days in advance. What would you recommend I do in advance and which steps should I do the day that I serve the soup?
    I really enjoy learning from you about how to use the instant pot (as well as the other kitchen tools you've recommended). I also enjoy hearing about your childhood favorite dishes, some of which are also mine and which I hadn't seen in such a very long time. I came across your channel, because I wanted to learn how to use the instant pot to cook Chinese dishes. You and Dude once called your kitchen an 'ugly kitchen', but for me, the 'ugly kitchen' makes me feel like it's my own home, so it feels comfortable watching you prepare ingredients and cook. There's so many reasons why I enjoy watching you Flo and your husband Dude !!

      So very kind... thank you! If you are to make the soup in advance, I'd do just that. Everything else to garnish the soup, prepare before you serve, like grating the cheese, slicing the avocado, and chopping up the cilantro. Hope that helps.

    Flo & Dude, entertaining and informative, as usual! I'm a Texas girl, so I'm really familiar with TexMex. I've been looking for a quick, tasty Chicken Tortilla soup recipe and yours fills the bill! On the next Costco run, check the frozen food aisles for frozen avocado cubes. If you don't see them, ask the manager. Another TexMex flavor to add to your arsenal is masa harina. It has a distinctive flavor and texture, very different from cornmeal. I'm going to sub the cream in the recipe with it. Same smooth texture, with an earthy flavor. It thickens my red beans and goes in my cornbread instead of flour. If you have a Latin market, get it there rather than from Amazon.

    1- I've never thought about using my pastry scraper to pick up chopped onions - been using my knife all my life.
    2- That is one ginormous hand blender!
    3- we moved from the Chicago area to Arlington, TX 3.5 y ago. Since I got my Crock Pot Express, we've been eating a wide variety of Tex Mex meals. I feel almost guilty hearing your price for avacados!

    Love the idea of the creamy version of this soup. Dude would probably enjoy pepper jack cheese as a topping also. Did you do something special with the thighs?

    Is there a place to print off the recipe? I went to your site, and did not see this recipe listed.
    Also, a Chipotle is a smoked Jalapeño. The can juice is great to add to things. I add a bit to eggs or omelettes in the morning. So Yummy.
    It is kinda neat to see how they make Chipotle’s, so I suggest checking out RUclips vids about that.
    Also, I love the Binford 5000 Man Handblender you have, which you used into this recipe. A Manblender if you will. Tim Allen would be proud. *insert grunting noises here*

    Flo did you use a 6 or 8qt for this recipe? Yeah to bad you don't live in eastern Canada. I can get avocados usually 3/$5 where I shop. Soup looks really yummy, can't wait to try it!

    Put your limes (any citrus) in the microwave for 10 - 30 seconds to make them more juicy.

      Alixandra Hice True. So exactly as hot as a Jalepeno, as that is what they are. Just smokeyer.
      Honestly I just found this out in the last year myself. I love them. I am using them a lot more now.

      Chris Broadfoot Although not dried when in the can. Plus there is Yummy juice when in the can that you can add to things. I add it into my eggs at breakfast.

    No, no no! You actually saute good quality corn tortillas from the Mexican store, for the base... No cream involved, why would there be? Cheese and sour cream as toppings (and lots of other stuff)
    Maybe I live in Arizona, USA...

    Are they organic chicken thighs? I don't spend more than $1.99 per pound for chicken. I watch carefully because I make my own pet food.
    I love my Instant Pot. BTW.
