That wouldn't be a good idea to be honest, interceptor with gt gas tank is cool but a gt with interceptor handle bar is a REALLY REALLY BAD IDEA, because of the gear shifter which is placed a lil back and high which is intentionally designed for leaning forward, doing this custom would look sexy but I'm pretty sure nobody can handle the body pain after that

The main difference between the two models is the ergonomic setup. The Continental GT has café racer clip-on handlebars, rearset foot controls, and a fuel tank carved for tucking knees in during more aggressive riding. In contrast, the Interceptor is more of a standard bike. The handlebars are upright, the flat, two-person seat is thicker and more comfortable, the foot pegs are positioned more directly under the rider’s knees, and the tank is a teardrop shape, with a gentle indent. I chose the first 🥰

Getting the Delivery of My Continental GT 650 today. The Stock Tyres have been changed to Ceat Zoom Cruz F by the company which are clearly a downgrade. After few days of conversations with the customer service they said that the tyres have been changed (Clearly the Advertising of Pirelli Tyres is a misinformation now) and after asking for the compensation for the price difference in price of tyres they said that there would be no compensation as there is no Mandate or promise given by the company to provide Pirelli tyres only. The attitude of the showroom is also quite bad. They said "Lena ho toh bata do nahi toh dusre log wait kar hi rahe hain lene k liye" (New Kind of Dadagiri). So basically if tomorrow they say that now we have changed the chassis also from Harris performance to some local Manufacturer or Bybre Break with something local, while keeping the price of the bike same, we as common consumers won't be able to do a thing. Highly Disappointed with this attitude of the "Highly Esteemed" Bike Manufacturer.
The engine would have to be tuned for more torque at the expense of top end speed and would need different gearing for off road use, which would make it quite different in character. The Himalayan fills a unique nice in the adventure bike segment because of its light weight and low cost. A twin cylinder Himalayan would be more expensive and heavier and would have to compete with a number of middleweight adventure bikes from major manufacturers with similar engine capacities and better power specifications (liquid cooling makes a huge difference). It would struggle to compete unless the price is insanely good in which case it would cannibalise the sales of the single cylinder Himalayan. A twin Himalayan will come but not before RE identifies a little niche in the market where it will fit in. The interceptor and GT have retro appeal, but adventure bikes are a modern concept, so it will be difficult to do a nostalgic take on that concept.
