I love brown butter. I make it to have on hand all the time, and love making ermine buttercream out of it. TIP: To make sure I make it the same every time, *I put it over medium-low with a candy thermometer, and when the temp reads 135°F (57°C)* , it's ready. :)
Made these last week they were delicious! I added some licor 43 to the caramel and some vanilla extract to the cupcake batter for that extra depth. All 12 were gone within an hour after baking them.

Definitely stove top popcorn. I can never keep from over cooking microwave popcorn, but almost never burn it on the stove top. Just drop a few kernels in the pan as the oil heats and its ready as the kernels pop. Be careful to wait until the test kernels pop or you are sure it's not going to pop.

Another great recipe. Can ask, when you use icing sugar in your american buttercream recipes like this one, are you using pure icing sugar or icing mixture with cornflour in it? I made your buttercream with pure icing sugar and it was very unstable so made piping difficult could this have been the reason?
Just a tip for those of you who find this caramel buttercream too sweet (it essentially has the double load of sugar, after all!) or have trouble with caramel making: Whip up your butter and then add some dulce de leche/sgushonka (caramelised sweetened condensed milk, Jemma has a "recipe" for that already) to taste. I got the tip from Tatyana's World :)
Of course not. You can just use 125g of regular soft butter but browning the butter like this really boosts the buttery flavour and without it it’s just a plain old sponge 😉

Yes I have had that with a few batches but I discovered that the cases I was using were causing them to fall apart whilst I took them out the cases to try, as they all turned out fine after I swapped to different ones.

You can def use just caster sugar, it won't have quite the same caramel flavour but still delicious

Just give the caramel a stir to loosen it before piping on top of the cupcakes. This was it will drizzle better :)

i got so confuse in my country we have salted and unsalted butter which are you prefer ?
I only ever use unsalted butter because that way I can control the amount of salt I want, if I want any at all 😁
