Key Lime Pie Cupcakes Recipe with Toasted Meringue Icing & Lime Filling | Cupcake Jemma

- We're back with another corker of a cupcake, the Key Lime Pie: a soft and zesty limey sponge sitting a top our favourite Buttery Biscuit Base and filled with home made Lime Curd (YUMMMM). And of course we are icing this with a toasted Swiss Meringue to get those proper pie feels. Theres nothing better to sink your teeth into (and most of your face too). And yes, it seems like an awful lot of work but actually it's pretty simple and we know you're gunna get on great with the recipe.

For the Biscuit Base:
175g Digestive Biscuits
50g Melted Butter
1 tbsp Golden Syrup
For the Cupcake:
Preheat Oven to 170C fan (190C non fan)
125g SR Flour
125g Caster Sugar
1/4 tsp Bicarb
125g Unsalted Butter
2 Eggs
2 Lime Zests
1 tbsp Lime Juice
1 tbsp Whole Milk
For the Swiss Meringue Icing:

660g Caster Sugar
330g Egg White
1/2 tsp Vanilla Extract
440g Caster Sugar
220g Egg White
1/4 tsp Vanilla
For the Lime Curd:
65g Caster Sugar
3 Egg Yolks
1 Whole Egg
65ml Lime Juice
1 Lize Zest
50g Cold Butter
Green Food colouring (optional)

Just made these and they are cooling. I must admit that we devoured the cupcake holes and they were scrumptious! I doubled the curd and halved the merengue. Everyone is clamoring for a full cupcake, but wait for dinner, we must!

Traditional southern American key-lime pie does not have meringue on it does. However it does have a ring of whipped cream around the edges. So if I make this it’ll be with a whipped cream frosting and a little tiny slice of a Keylime on top so you can give it a little squeeze before you eat.

If I may be so bold, I will tell you that Key Limes are a very specific type of lime, and it looks like you've made these cupcakes with Persian limes - which have a different taste and shape - and they are more yellow. So you're making Lime Meringue cupcakes, but you're not making Key Lime Meringue cupcakes. I'd LOVE to try this recipe as-is, and also made with actual Key limes! It's a more floral, complex flavor.
Whatever you call them, I'm sure they are fantastic! I look forward to seeing Sally, Dane, and Jemma again and again!!

I made these for family graduation. They were a big hit. They are however quite labor intensive. I question the reason behind the all in one mixing of the cupcake batter rather than a traditional creaming method? My cupcakes were successful however , tougher from the all mixed method, maybe die to activating the gluten. I would make again but cream the butter and eggs and stir in the dry and wet.

Always love an OG recipe from C&D, which brings me to an OG question! Is there a reason why C&D phased out the use of the marshmallowy meringue icing and just ice cakes with Swiss meringue now?

Hi Sally! I recently tried your cookie dough cake recipe, and absolutely loved it! Dying to try this one. Just have two questions.
1. Do the meringues have to reach "stiff peaks"?
2. Is there a way to torch the meringue without a blow torch?
Hey Malavika! It's best to reach stiff peaks when working with meringue. If you do not beat the eggs long enough, you'll find your meringue mix will be soggy, and messy! You can also use the broiler/oven grill to 'torch' the meringues. Place them close to the element for 30-60 seconds, until you see that beautiful brown colour on the meringue tips! 😻😻
How long will the cupcakes last with the Swiss meringue on them?

But not sure what to use for the base as I am FODMAP. Less Gluten. But I could actually eat one as base is small. Love the piping bag and Blow torch. Would the oven setting be just “Hot Air function and No Steam? “ Will try these very soon. Thanks for recipe. I adore your personality.xx

If you look for the lemon meringue layer cake we did you can adapt that to be limey :)

Place the meringue under a broiler/oven grill for 30-60 seconds, until the peaks are a beautiful brown colour! 😻😻
