- Just one glimpse of sunshine and we are all going CRAZY for summer. So let's start off our summer bakes with this absolute gem of a cupcake: Lemon and Poppyseed! A light and zesty lemon sponge filled with the BEST lemon curd to give that full on punch-in-the-face lemon kick, rounded off with a smooth tangy cream cheese frosting and a sprinkling of poppy seeds to cut through the sweetness and add a little nuttiness to this delicious cupcake.

For the Cupcakes:
125g Self Raising Flour
125g Caster Sugar
1/4 tsp Bicarbonate of Soda
125g soft Unsalted Butter
2 Eggs
Zest of 2 Lemons
1 tsp Poppy Seeds
1 tbsp Lemon Juice
1/2 tbsp Whole Milk
For the Curd:
110g Caster Sugar
110ml Lemon Juice
Zest of 2 lemons
5 Egg Yolks
1 Egg
90g cold Unsalted Butter
For the Frosting:
150g soft Unsalted Butter
240g Cream Cheese (full fat)
840g Icing Sugar

What happened?
I think she deleted the comment the person made but the person said - Please get Jemma back! This is her channel! You are wonderful Sally but sometime you act weird especially when tasting the desserts at the end-
then on Sally’s story she put (my main issue with the internet is that it gives everyone a platform to say what they like and don’t think about how it may affect others, I’m just doing my job thats all)

Is it possible to put less sugar in the buttercream? Would love to hear how to make it less sweet!
Just start with half the sugar and keep adding until you get the sweetness and firmness you prefer :)
use salted butter instead
I add 1/2 cup salted butter, 1/2 cup cream cheese, 1 cup icing sugar.
Adding salt can tone down the sickly sweet aspect of buttercream. It’s best to still use unsalted butter and add salt to taste. Look at recipes that include salt to get an idea of ratios

Can you guys do a curd masterclass? I'd love to know how to make it a flavor other than lemon.
It’s basically the same thing with all fruits. Get a purée/juice, sweeten to taste, mix with egg yolk or sometimes egg yolks and a whole egg and then heat while stirring until it thickens. Non citrus fruits can benefit from a couple tablespoons of lemon juice for flavour and chemistry reasons but basically the same principle for all of them. (just made a raspberry curd today, absolutely delicious)

Definitely try their recipe. Jemma uploaded a video a few years ago its been my go to for lemon curd. I have tried other recipes but they do not give the same result and hers is so simple without any faffing around.

If you don't add enough sugar it will just taste like you have a slab of cheese on the cake and won't be very nice!
Cream cheese icing needs more sugar to counteract the cheesiness
