Interesting to see Sally's videos. For some reason I get the sense her technical ability is greater to Gemma's. Thank you Sally for giving us the correct recipe for the buttercream (none of that adding 4 tbsp of milk and making it too runny) ❤️

And I have NEVER heard Jemma ever talk about 4 WHOLE tablespoons of milk. Also, a baker knows that if your icing is too runny, then put a bit more powdered sugar in it. Like the old saying goes, "Opinions are like a**holes, everybody's got one!" Love you, Sally, but I love Jemma as well. You are both amazing bakers with amazing personalities.

The whole point of RUclips tutorials is to give you the exact recipe accurately, because guess what? We are not bakers. And when someone makes buttercream for the first time it's really disappointing when it turns out too runny. So yes, I'll voice my opinion just like you can voice yours. Finally Jemma herself has many times said in her videos that Sally is a better baker than her, so I wasn't being rude, I was agreeing with her.
Lovely, I made jemmas raspberry and lemonade cupcakes this weekend for a birthday, we sat in rehearsal park London to eat them. This recipe is similar but with a different toping, and strawberry instead of raspberry. Can't want to try this, your recipes are always fab.
Omg, I just made it. I think this is the best cupcakes that I ever baked. So fluffy, soft, easy, and super delicious, they're perfect. Love it, thank you so much ❤️❤️

yes yes, what a cracking method, made cakes since forever but this is a great explanation and I love the buttercream method too - i usually just bung it all in mixer!! definitely going to try Sally's way. LUSH right there
Can I ask, are you from the US? I’ve often noticed that American recipes seem to skip the step where the butter is creamed first, while it’s an elementary step in most European recipes. I’d really be interested in finding out why that difference is there!

OMG! My husband was stationed at Ft. Bragg from 1985-88, so our family lived there. I miss it so, so much! It was so beautiful and we really had fun and "grew up" being away from family here in Iowa, you know? LOVED it there!

Does the milk go off in the buttercream or can you buttercream the cakes the night before and leave at room temperature or do they have to go in the fridge
The milk doesn’t go off no. :) and yes you can definitely make the night before. I’d recommend drizzling the sauce at the last minute though so it doesn’t bleed into the icing x
how long would something like this with the fresh strawberry goo and the buttercream last out of the fridge/in the fridge? what if you leave them out for a few days and then put them in the fridge? whats recommended?

Could there be anything more English? I grew up eating Eton mess during our Canadian strawberry season while my parents had their strawberries with clotted cream. My mum loved making meringues and pavlovas, as eggs were always economical and the results were amazing 💗
I love making Pavlovas too. Unfortunately the recipe I've been using since I started making them seems to have failed me at times. Would you mind sharing your mom's recipe if you know it? I'm in the US. I always bake my Pavs on a Conventional setting but my stove does allow me to do both. I've just never tried it. Just wanted to give you that bit of info because I know baking there vs here is different...

Watch the video for meringues in the description box and follow the instructions to the t and it should work for you! They are a hundred percent better than store bought! Good luck! 😘

Confession time, sometimes I use a mix of salted and unsalted for my sponges... but I *really* love salt.
I almost always use salted butter when baking, it’s what I keep in my house 🤷♀️ I don’t notice, but I know a lot if people do.
