James Hoffmann, yeah who else would it be. He's "the" coffee expert for the job. I actually squeed when Alex called him. I love James' RUclips channel. An award winning barista himself, James teaches different techniques in coffee preparation, how to choose the right beans and ingredients, testing different coffee-making gadgets, and he has done a lot of crazy and funny things involving coffee. He's done some baking and cooking with coffee too. I'm so excited to see how he could help with Alex's coffee dilemma.
He hinted in the comments of the 1rst crème brûlée video that this series is about "Paris' best" If that's correct there will probably be more sweets (I'm hoping for mille-feuilles) but possibly also savoury treats you can find in bakeries (Paris' best quiche? fougasse? jambon-beurre?)

Wow. Alex this Video is another Masterpiece! The Camerawork, Editing and Storytelling are absolutely awesome. In my mind I could smell and taste everything I saw. And I guess we reached a new stage, with the master chef teaching you and us in your legendary studio-kitchen.
Even before I finish the video I know this is gonna be a great one. I am OBSESSED with eclairs, they're my favorite pastry since childhood. And now that i live in France, my preferred choice is also mostly coffee eclair for a couple of reasons. First, in my country (Turkey) we classically only have chocolate glazed eclairs with 2 types of filling: vanilla custard and chocolate custard. And I usually prefer vanilla custard+chocolate glaze mix cause it feels so much lighter. But these aren't available in France, so sometimes chocolate over chocolate is a bit too much !! Thus i go for my next favorite flavor, coffee! Always goes great with the choux and not as overwhelming, yum 😋

Even in Germany i have heared of UTOPIE Bakery. They are outrageously good! I was in Paris for a Buisiness Trip just a few months ago and every day i went there and ate my way through their offered Food and everything was excellent. My Business Partner recommended me this Bakery while i was preparing for the trip. If anyone reading this is in Paris or plans to go there make going to this Bakery a big priority :D

First thought that came to mind was to do a slow brew with the coffee on medium-low heat so you extract as much of the flavour you can without boiling it off, in as little water as you can manage; basically, concentrate it down. Or maybe do a regular strong brewing and then use your desiccator to drive off the moisture and concentrate the coffee flavours that way. Interested to see what James will suggest!

I visited Paris three years ago, and stayed at the hotel just up the road from this bakery. As a complete fluke, we bought breakfast from this boulangerie on our way out of town. It was phenomenal!
