Hello Folks!
So tonight for tea I made this wonderful Tuscan chicken :) Perfect served over rice, mixed through pasta or as we had it, with mashed potato. Creamy tomato chicken…just full of flavour!

Serves 3 -4
2 - 4 Chicken breasts | Slice through the middle lengthways
1 Tablespoon butter
1 Tablespoon olive oil
2 Tablespoons Tuscan seasoning - or seasoning of your choice
1 Red onion - finely diced
200g | 7 oz Mushrooms - sliced
180g | 6.3 oz Sundried tomatoes - chopped
150g | 5.2 oz Grated parmesan cheese
300ml | 10.5 oz Chicken stock
200ml | 7 oz Double cream
1 Tablespoon fresh chopped parsley

Thanks Cheryl, at first glance I thought the spice mix said it had ‘marzipan’ in it, not marjoram! 😂 adjusted my glasses and all became clear 😂😂😂

Great recipe. Thanks for showing the spices listed on the jar. Love the line "Don't contain any nasties....". So, no anti-clumping additives. I have lots of herbs to use.

Im a bit late to the party this week! Wow that looks tasty. Its freezing here in AZ this week, so a warm plate of tuscan chicken and mash is a great idea!

I make Tuscan chicken at times and it always turns out nice. Your version is little different then mine but basically the same. I find with Tuscan chicken it is great for skinned chicken thighs, fry them in Olive oil with garlic to crisp up the skin, flip and fry a little more then remove(will finish cooking later). I chop up and fry the mushrooms with garlic and then add spinach(frozen works), then add cream or even milk with parmesan and add chicken and let simmer for 15-30 minutes. Can add Italian spice to the simmering sauce if you want more flavour.

The good news is if you don’t have that Tuscan spice it encompasses the standard spices in one’s kitchen cupboard. This recipe sure looks delicious and would go nicely and up the protein intake with a tin or two of chickpeas in it. ❤
Finally made it tonight but using cream cheese and oh my 😍

Made this last night with few adjustments I used a jar of the sun dried tomato pesto u can buy to marinade the chicken, I added chopped 🧅🍆🫑, diced pretty small at start, plus I used grated parmesan cheese at end, plus I melted in 2 of the mini cheese roules u get in aldi with basil, 🧄 and sun dried 🍅 in them. Boy were they delicious oh yes and splash of lemon 🍋 juice at end and fresh basil and spinach just melted through the sauce. As Cheryl reccomended I served over fresh mash potato and had steamed greens on the side. Totally 😋😋😋😋

I made it today. my son posted a photo on his Instagram. I only had chicken tenders. I cut them into bite size after they cooked. I used sundried tomatoes that I dehydrated a couple of yrs ago. I got carried away with the cheese, but it was good. I used spinach. I'll be making this one again soon. I served it with rigitoni. @@WhatsForTea

Happy new year, Cheryl! Just for inspiration: 2 channels I found. For italian cooking: Pasta Grammar. Eva is italian and got stuck in the US, when the pandemic hit. Now she's together with a guy she met there. And they created this channel. And Eva is very strict about authentic italian cooking :-)
Only yesterday I found that Molly Baz has her own cooking channel here on YT. 1st of all: she's great in explaining things. 2ndly: I LOVE her sense of humour.

Btw: do you have a recipe for fishcake? I've invented one (that I could post for comparison), but still open for more input. Tonight, i.e. I wanna try a version using octopus instead of fish.

Hi there ☺ this seasoning was sent to me from a subscriber in Australia....but it's easy to create the same kind of flavour. Have a look in the supermarket in the spice jar section...see which one of the tomato based ones takes your fancy x

Does anyone have any suggestions as to what to use in for the tomato seasoning Cheryl is mentioning here? I checked the spices and seasoning aisle in my local tesco and can find nothing of any use. I'm not going to order the spice blend featured here as I'm in Ireland and, I'm addition to the price and p & p, we are getting caught out and hammered with an 'import/customs charge" when ordering from UK. Basically our parcel is withheld by the postal service until the charge us payed which can be up to an extra €10 which is madness and very off putting. So I really wanted to find an alternative to this spice mix. Amy suggestions please? Please remember that the supermarkets here in Ireland are Tesco, Lidl amd Aldi. We don't have Morrisons Sainsburys Asda etc and my nearest M & S is 60 minute drive away. TIA

You can use milk if you want, reduces as it simmers, or add a little corn starch or flour if you really want it thicker.

You could use any size you prefer ☺
