I am gobsmacked! I have been on this planet a long long time. This is extraordinary, the first time I've evér heard of anyone and I mean anyone, making Sqare or Sliced Sausage at home. Or. Who the hell makes their own Square sausage? You, and perhaps a Butcher. If you find your rolls are hard and would still like a roll, sprinkle some Milk over the top, then in the Microwave for 6-10 seconds. You can count the Seconds out loud. This way you won't go over time.Put a small amount of milk in to a saucer The Rolls :- Dip your fingertips in, then shake over the Rolls like a sprinkler. Remove and STAND . They will taste as fresh as freshly made.

I also have Irish friends who maintain that an Irish Breakfast is also equally as superb as a Scottish one. Since I now live in the food desert of Sweden I have to roll my sleeves up and make my own sausages, sausage rolls, pork pies, homed-cured bacon (green and cold-smoked), steak & kidney pies, bread, crumpets and Derbyshire oatcakes (a very different product from the Scottish ones) among many other nostalgic delights. I frequently have local Swedes knocking at my door and licking their lips hoping that I'll give them some of my home-made British food! I have not yet attempted to make any square (Lorne) sausage, but your mouth-watering recipe has me longing for some. Time to get my sleeves rolled up again. Thanks for the wonderful videos. I never get tired of listening to your lovely voice.
As a Scotsman at a wedding in Dublin, the thing I loved most about my Irish Breakfast was the slice of Red Pudding. I hadn't had Red Pudding since I was a wee boy living in Leith. Red Pudding as some of you may know is Liver sausage, doesn't sound appealing I know, however it is very well seasoned so, very tasty.

Made these last night and just had one in a sandwich with HP sauce. Delicious thanks for this recipe. £7 for the ingredients but worth every penny. Organic meats and egg I know exactly what is in it and no preservatives.
Just made another batch of your square slice. Thank you for the great recipe and so easy to do. TIP for others having a bash at this, in order to taste to see if your seasonings are to your taste, take a tablespoon of the mixture and fry. This way you can adjust. It’s easier to add more seasoning but not remove. I tweaked mine a little to taste more like the butchers I get my square slice from when back home for a visit as I like it with a little more white pepper and a smidge more of the coriander and a little less nutmeg. ALSO, if in America making this recipe, use the gram measurements. 180g of the breadcrumbs is 2 cups, not one, even though websites may give that equivalent. It’s always best to weigh ingredients. I got a digital scale that does both ounces and grams/kilos and I use it all the time especially for recipes from back home. Anne From DC 🏴🇺🇸
In the southern U.S. we use the exact same blend of meats, bread crumbs, and the same spices to form a loaf. Instead of chilling and slicing we bake the entire loaf at 175c for one hour. We then slice it and use it in exactly the same way you do. I have half a loaf in the fridge right now. This is a recipe that has been transferred exactly from the old world to the new, except we precook it. We call it "meat loaf".

i left Scotland, (WIshaw, the original home of Irn Bru, as im sure you fellow Jockanese know), in 1980 for Canada.... so its been 40 yrs since ive had square sausage..... i followed you to a "T".... i just made a couple tins, and my sister and wifey are DYING to have it "the morrah".... hahaha... ta pal!!!

My mother, from Scotland, used to by this at the Scotch butcher, in Paterson, NJ, USA. She would boil it with cabbage, potatoes and onions and called it "Irish stew". I've never had anything close to it in years. I'll give this a try.
We lived for so many years in Africa and my Mum & Dad really missed Scottish cooking. In the middle of summer my Dad would make 'potted haugh' which he would set in ramekins. We used to eat this with salad and we loved it. He even taught our local butcher how to tie up a roll of brisket so he could make scotch broth and we would eat the brisket with boiled potatoes, carrots and peas. Both of my parents would have loved your channel, as I do. Thank you for sharing and teaching us our culinary heritage. You are a diamond!
We do get the slice sausage here, albeit the colour sometimes is a funny shade of grey, I suspect there is too much fat and not enough meat in the sausage. Thanks Cheryl for teaching us how to make them from scratch. My folks used to stew the sausage with onion and gravy.......and also links too........Oh! Hells bells ...I'm starving...Lol...next on the list ...morning rolls Hahahaha!
When I was in Dundee was Lorne, I stayed in Broughty Ferry for a year and what a great place for butchers( bootchers) and fishmongers, and the Sainsbury in Dundee great spice aisle.

I love mines with a buttered well fired roll, sausage has to be crispy on the outside and softer in the middle, tomato sauce and either a mug of tea or a glass of irn bru. I now live in England and every year my Auntie Anne will bring some down from Kilsyth, so nice.

Being an East coast Scot I'd never really eaten square sausage 'till I moved to Glasgow for a couple of years. The wee breakfast place 'round the corner served it on a roll with a slice of tattie scone tucked in there too for good measure. Very good. Used to buy a whole block/loaf of it from one of the butchers at the Barras. One of them made it with finely chopped spring onions through it, that was my favourite. I'd take it home, slice and freeze it and it kept for ages that way... Or until friends came to stay and then it was time for a cooked breakfast! Going to give your mix a go, have only made them with beef before, so the addition of pork should keep it moister and softer. Thanks for the videos.
Good to find a recipe. Found a butchers that sells square slice here in New Zealand but its just not the same. Will give this a try soon. Good tip for you. Try mixing the spices into the water before adding it to the mince. It will distribute the spices more evenly through the mix.
Just had a square sausage in a bun today at work. I had it from my dear Scottish Canadian friend at work,for the first time, ever. Frankly it tasted way better than it looked. I personally thought the most delicious thing coming from the most basic ingredients. That comes in your video. I definitely will try this recipe and show off to him one day. A wee tip for slicing it is to wet your knife before each cut , my favourite is Lorne and streaky bacon on a buttered White morning roll with broon sass 🥃🏴

I'm a linguist with a fascination for dialectic variations and this presenter has all the credit for interesting and even charming variations of the basic English pronuciation as spoken in Scottland. It's simply nice to hear her speak. She charms you with her easy pronunciation and speech to the point where you like listening to her, just to hear her speak. If you live in the U.K. you have English accents, Welsh accents, Scottish accents and Irish accents and they are all English but they are all clearly belonging to a geographic area and unique to those parts. That's what makes the U.K. unique and great.! Can't say the same for the accent I was born with, namely, 'Cockny' which I never held in particular esteem. I spend my life pretending I'm from Cornwall or the Isle of Skye rather than be identified as a 'Gor Blyme' cockney.! I know, it's irrational but who said being rational was better than being from Radnorshire.? And trust me, if you play this game, you'd better get it right, because you have no idea how quickly you get caught out.

Yes scotch is a DRINK whisky , scottish butcher is more appropriate, call us scotch is a whay to p*** off an entire nation!
We lived for so many years in Africa and my Mum & Dad really missed Scottish cooking. In the middle of summer my Dad would make 'potted haugh' which he would set in ramekins. We used to eat this with salad and we loved it. He even taught our local butcher how to tie up a roll of brisket so he could make scotch broth and we would eat the brisket with boiled potatoes, carrots and peas. Both of my parents would have loved your channel, as I do. Thank you for sharing and teaching us our culinary heritage. You are a diamond!
We do get the slice sausage here, albeit the colour sometimes is a funny shade of grey, I suspect there is too much fat and not enough meat in the sausage. Thanks Cheryl for teaching us how to make them from scratch. My folks used to stew the sausage with onion and gravy.......and also links too........Oh! Hells bells ...I'm starving...Lol...next on the list ...morning rolls Hahahaha!

When I was in Dundee was Lorne, I stayed in Broughty Ferry for a year and what a great place for butchers( bootchers) and fishmongers, and the Sainsbury in Dundee great spice aisle.

I'm in love with lorne sausage since I moved to Scotland 10years ago. I love mines with a buttered well fired roll, sausage has to be crispy on the outside and softer in the middle, tomato sauce and either a mug of tea or a glass of irn bru. I now live in England and every year my Auntie Anne will bring some down from Kilsyth, so nice.

Being an East coast Scot I'd never really eaten square sausage 'till I moved to Glasgow for a couple of years. The wee breakfast place 'round the corner served it on a roll with a slice of tattie scone tucked in there too for good measure. Very good. Used to buy a whole block/loaf of it from one of the butchers at the Barras. One of them made it with finely chopped spring onions through it, that was my favourite. I'd take it home, slice and freeze it and it kept for ages that way... Or until friends came to stay and then it was time for a cooked breakfast!
Going to give your mix a go, have only made them with beef before, so the addition of pork should keep it moister and softer.

Good to find a recipe. Found a butchers that sells square slice here in New Zealand but its just not the same. Will give this a try soon. Good tip for you. Try mixing the spices into the water before adding it to the mince. It will distribute the spices more evenly through the mix.

Just had a square sausage in a bun today at work. I had it from my dear Scottish Canadian friend at work,for the first time, ever. Frankly it tasted way better than it looked. I personally thought the most delicious thing coming from the most basic ingredients. That comes in your video. I definitely will try this recipe and show off to him one day. A wee tip for slicing it is to wet your knife before each cut , my favourite is Lorne and streaky bacon on a buttered White morning roll with broon sass 🥃🏴

I'm a linguist with a fascination for dialectic variations and this presenter has all the credit for interesting and even charming variations of the basic English pronuciation as spoken in Scottland. It's simply nice to hear her speak. She charms you with her easy pronunciation and speech to the point where you like listening to her, just to hear her speak. If you live in the U.K. you have English accents, Welsh accents, Scottish accents and Irish accents and they are all English but they are all clearly belonging to a geographic area and unique to those parts. That's what makes the U.K. unique and great.! Can't say the same for the accent I was born with, namely, 'Cockny' which I never held in particular esteem. I spend my life pretending I'm from Cornwall or the Isle of Skye rather than be identified as a 'Gor Blyme' cockney.! I know, it's irrational but who said being rational was better than being from Radnorshire.? And trust me, if you play this game, you'd better get it right, because you have no idea how quickly you get caught out.
