In my country we call them råraka, we do tend to make them smaller and thinner though. We also have a potato panncake called raggmunk, where you make like a crepe batter with milk, flour and eggs, and then add in shredded potatoes. Now I have to buy potatoes, as I want raggmunk with bacon.
I love some onion, leek or chives in mine and also a sprinkling of dried red pepper flakes for a little heat. (And those dried onion flakes will do at a pinch instead of fresh onion). Love how neat yours are Cheryl. Mine are usually all over the place!

LOL The reason that I am so pleased is this. I was in Germany in 2001 (at the time of 9/11) and I was bowled over by 1) their rye bread and b) their rosti. Various attempts here at home by me to reproduce both, have been pretty poor - until today! I hope that you will have a go at rye bread some time (but not pumpernickel) . . . just a British style "white / brown loaf" with rye in it. Kind regards for Christmas from Mexico.
My first boarding school used to do sweet corn fritters - not sure if they were made similar to those - adding sweet corn at some stage! Looks delicious, though!

We having pork tomorrow waa going to do it with marmite cheesy pasta, but think now I'm going to.make this rosti instead. I also made home made onion chutney on sat so u think the rosti, pork & chutney , delicious thanks for sharing Cheryl

We used to have this at my uncle's farm, around 4.30 in the morning, before heading to the fields... This used to be everyone's breakfast in my country !

To avoid wasting the starch it can be used in soup or stews as a thickener, in gravy, in batter for crisper meat fish vegetables ect
Maybe save that potato starch to add to soups to thicken them a little, or gravy or something... I think it could be frozen, if you have the space.
