- This rustic dish has its origins in the Italian region of Tuscany, using simple ingredients to their very best. The chicken is cooked with robust flavours of garlic, rosemary and chilli, served on delicious bruschetta.

Ingredients
For the chicken:
1kg x chicken pieces, thighs & drumsticks
Salt & pepper
Plain flour for dusting
150 ml extra virgin olive oil
Cloves from 1 garlic head, kept whole with skins on
A large bunch of rosemary, broken in half
150 ml white wine
For the bruschetta:
A few slices of bread
A garlic cloves, peeled but left whole
Method
Season the chicken chunks with salt & pepper and dust with plain flour. In a large heavy-based frying pan, heat the extra virgin olive oil. When hot, add the floured chicken chunks and seal well on all sides for a couple of minutes until golden-brown and quite crisp.
Reduce the heat to medium, add the garlic and rosemary, cover with a lid and cook for 30 minutes, turning the chicken from time to time. Raise the heat to high, remove the lid, add the wine and simmer until it has evaporated.
Check the chicken is cooked; the flesh should come easily away from the bone and there should be no sign of pink when you pierce the thickest part. Skim off the oil from the top and set aside.
For the bruschetta, toast some slices of bread, immediately rub them with the garlic and then drizzle with some of the reserved olive oil. Serve the chicken with the bruschetta.

The best thing about Gennaro (apart from EVERYTHING) is that he doesn't talk as though he's talking to an audience, he talks as though you are his favourite grandchild and you are right there in the kitchen with him, learning how to make the family recipes.

I like the creamy version with sun dried tomatoes. And I don't want an entire clove of garlic on my plate. Just didnt care for this version. Looks primitive.

A very dramatic presentation for a simply delicious chicken dish. Demonstrating a lesson I have learned in 45 years of cooking, simplicity always produces the most delicious foods.
I’ve been looking at a few “Tuscan Chicken” recipes….and some, although they look and sound amazing (cream, sundried tomatoes, paprika)…this is authencity. I can see it, smell it and taste it through Gennaro’s visceral demonstration of how to cook this rustic dish. I’m going to do this for my Italian priest.

These haters believe "Olive Garden" is authentic Italian, with the everlasting bread sticks, and greasy, over cooked and separating sauce, drizzled over noodles. Or maybe they just can't cook! )))) SMH!((((

Tuscany - the land of everything
So I've cooked this today for lunch... Sadly I didn't have fresh rosmary or some high quality vine, but the taste, the flavors.. OMG, it put chicken on a whole nother level, that i've never experienced before... so simply and sooo good! :D
What amazes me with this dish is that there’s such simple ingredients, and the outcome is always restaurant worthy.

The only other chef that I love watching cook on RUclips is Marco Pierre White, with his Knorr Stockpot and Great British Feast videos. He instills quite a lot of confidence in me to work at building my technical understanding of cooking, as opposed to worshipping recipes every time I pick up a frying pan. I mean this in the most sincere way: that Gennaro makes me think of someone - an average guy, not Michelin trained or world famous - who is filled with such a genuine love and passion for food, that it pours out of him. Every movement, every gesture, every excited shout, is just him sharing his joy with the viewer. I one day hope to cook with such fervor as Gennaro!

Astounding in its simplicity and its flavour. I have not one iota of Italian ancestry but Italian cooking in ALL of its regional variations has become my favorite. It even made me appreciate eggplant (melanzano... sp?) which I thoroughly despised when cooked by (unfortunately) my mother. She had her strengths (best steak and kidney pie ever) but eggplant (and liver) defeated her.

made this tonight, only had chicken breast handy, but even with that it turned out beyond delicious! This will be a constant in my rotation of recipes now. I also made an eggplant side dish and we rubbed the crostini with little tomato halves just before eating, also had a ricotta/parmesan/toasted pine nuts/basil side thing. Whole family loved it, I wish I'd have made double, wonderful recipe!
It got me through university alongside with few other of his recipes. Since you're gonna cook it till the meat falls off the bones it doesn't matter what kind or which part of the chicken would be used I could just buy the whole chicken and cut it down. A bottle of wine is enough for 2 or 3 halves of a chicken. It's quite inexpensive for a quality meal.
